Gluten and Dairy Free Chorizo, Avocado and Tomato Canapes



  1. Cut the panini rolls into slices
  2. Preheat the oven to 180 oC
  3. Place the bread slices on a baking sheet and bake for 10 minutes or until crisp
  4. Set aside to cool
  5. Fry the chorizo until crisp
  6. Set aside on a piece of kitchen towel
  7. Slice the tomato then cut the slices in half
  8. Mash the avocado and stir in the lime juice, garlic and season with salt and pepper
  9. Spread the avocado on the bread and top with the chorizo and tomato
  10. Sprinkle with some fresh coriander or basil
