Gluten and Dairy Free Chilli Sweet Potato and Quinoa Soup

Serves 4

Ingredients

  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 small red chilli, sliced and deseeded
  • 1 onion, diced
  • 500g sweet potatoes, peeled and diced
  • 950ml vegetable stock
  • 50g red lentils
  • 60g quinoa
  • salt and pepper, for seasoning

Directions

  1. Place the olive oil in a large saucepan over a medium heat
  2. Add the garlic, onion and chilli
  3. Saute for 5 minutes
  4. Stir in the sweet potatoes, stock, lentils and quinoa
  5. Bring to the boil and simmer for 25 minutes
  6. Blend then season with salt and pepper
