Gluten and Dairy Free Chilli Chicken Pasta Salad

Ingredients

  • 1 cooked chicken breast, cut into cubes
  • 150g gluten free pasta, cooked per instructions on packet
  • 1/2 teaspoon mild chilli powder
  • 1/2 teaspoon smoked paprika
  • 1 red pepper, finely diced
  • 2 spring onions, finely sliced
  • salt and pepper for seasoning
  • 2 tablespoons dairy free natural yoghurt
  • 2 tablespoons mayonaise, check it is dairy free
  • 1 teaspoon olive oil
  • 2 teaspoons fresh lime juice
  • handful of fresh parsley

Method

  1. Mix together the chilli, paprika, natural yoghurt, mayo, olive oil and lime juice
  2. Stir in the chicken, pasta, pepper and spring onions
  3. Season with salt and pepper
  4. Top with some fresh parsley
