Gluten & Dairy Free Chicken & Vegetable Pasta Bake

A creamy pasta bake packed full of chicken and vegetables

  • 1 tbsp olive oil
  • 2 garlic cloves minced
  • pinch chilli flakes
  • 2 chicken breasts diced
  • 1 onion diced
  • 1 pepper diced
  • 1/2 head of broccoli cut into small pieces
  • 150 g mushrooms sliced
  • 250 ml dairy free cream
  • 75 g dairy free cheese grated
  • 225 g gluten free pasta
  • satl and pepper for seasoning


  • Cook the pasta per the instructions on the packet and set aside
  • Add the olive oil to a pan over a medium heat
  • Add in the garlic, chilli and chicken
  • Sauté for 5 minutes
  • Add in the onion, peppers, broccoli and mushrooms
  • Sauté for 5 minutes or until the vegetables are tender
  • Pour in the cream and season to taste
  • Cook for a couple of minutes
  • Stir in 50g of the dairy free cheese
  • Heat the grill to high
  • Stir the cooked pasta into the sauce
  • Pour into a large casserole dish and top with the rest of the grated cheese
  • Grill for a couple of minutes
  • Serve topped with some fresh basil
