Gluten and Dairy Free Chicken and Spinach Pasta Salad

Serves 4

Ingredients

  • 2 chicken breasts, cut into chunks
  • 3 large handfuls spinach
  • 2 tablespoons sun-dried tomatoes
  • 1 red onion
  • 2 tablespoons dairy free basil pesto
  • 150g gluten free pasta

Method

  1. Heat a drizzle of olive oil over a medium heat and stir fry the chicken for about 10 minutes
  2. Cook the pasta according to the instructions on the packet
  3. Allow the chicken and pasta to cool
  4. In a large bowl stir together the chicken, pasta, spinach, tomatoes, onion and pesto
  5. Divide between two serving bowls and enjoy
