Gluten and Dairy Free Cheese and Tomato Baked Quinoa

Serves 4

Ingredients

  • 180g quinoa
  • 430ml boiling water
  • 4 eggs
  • 4 tablespoons dairy free cheese, grated
  • 8 cherry tomatoes, halved
  • 1 onion, grated
  • 1 pepper, finely diced
  • salt and pepper, for seasoning
  • 2 teaspoons oregano
  • 1 tablespoon fresh basil leaves, chopped
  • pinch of chilli flakes
  • 2 garlic cloves

Directions

  1. Rinse the quinoa with water
  2. Place in a pan with 430ml boiling salted water
  3. Cook until the water is absorbed, about 10 minutes
  4. Preheat the oven to 180 oC
  5. Place the onion, pepper, chilli and garlic in a shallow pan and sauté for 5 minutes
  6. Whisk the eggs in a large bowl
  7. Stir in the cooked quinoa, sautéed vegetables, tomatoes, basil, oregano, cheese and seasoning
  8. Pour into a greased baking dish
  9. Bake for 25 minutes
  10. I served mine topped with some fresh spinach and extra tomatoes
