Gluten and Dairy Free Cheese and Bacon Pancakes

Serves 2


  • 2 slices smoked bacon
  • 1/2 small onion, finely diced
  • 1 garlic clove minced
  • 100g gluten free self-raising flour
  • 1 egg
  • 100ml dairy free milk
  • 12 tablespoons dairy free cheese, grated
  • salt and pepper for seasoning


  1. Cut the bacon into little pieces
  2. Saute the bacon, onion and garlic in a little olive oil over a medium heat for about 5 minutes
  3. In a large bowl stir together the flour, seasoning and dairy free cheese
  4. Beat the egg and stir into the flour mix
  5. Gradually whisk in the milk until you have a smooth batter
  6. Stir in the bacon mix
  7. Heat a drizzle of oil in a shallow pan over a medium heat
  8. Add a quarter of the mix into the pan and cook for a couple of minutes on each side
  9. Repeat until you have cooked all the pancakes
  10. I served mine with some mayonnaise, chives and a little bowl of tomato soup
