Gluten and Dairy Free Carrot Cake Pancakes

Serves 2



  1. Whisk together the flour, sugar, egg and milk
  2. Stir in the grated carrot, walnuts and cinnamon
  3. Add a quarter of the mix into the pan and cook for a couple of minutes on each side
  4. Repeat until you have cooked all the pancakes
  5. Serve with some whipped coconut cream
