Gluten and Dairy Free Breakfast Rolls

Serves 2


  • 2 gluten free rolls
  • 1 tablespoon mayonnaise, check it is dairy free
  • 1 tablespoon tomato ketchup
  • 4 rasher of smoked bacon
  • 2 eggs
  • 4 cherry tomatoes, sliced
  • handful of spinach


  1. Lightly toast the rolls
  2. Fry the bacon for a couple of minutes on each side or until crisp
  3. Fry the eggs until cooked, about 3minutes
  4. Spread the mayo on the base of the rolls then add the bacon, egg, tomatoes, ketchup and spinach into each roll
  5. Enjoy!
