Gluten and Dairy Free Basil Pesto Chicken Sandwich

Serves 2


  • 2 gluten free panini rolls (I used Schär)
  • 1 cooked chicken breast, cut into slices
  • 1 tablespoon gluten and dairy free pesto (click here for my recipe)
  • 1/2 small red onion, diced
  • 2 slices dairy free cheese (I used Violife)
  • handful of spinach


  1. Preheat the oven to 180 oC
  2. Place the chicken slices into a bowl and stir in the pesto
  3. Cut open the panini rolls and fill with the chicken
  4. Top with the dairy free cheese and a sprinkle of red onion
  5. Place on a baking sheet
  6. Bake for 8 minutes
  7. Remove from the oven and add in some spinach before serving
