Gluten and Dairy Free Banana Choc Nut Muffins

Ingredients

  • 125g dairy free spread
  • 170g brown sugar
  • 4 medium bananas, mashed
  • 2 eggs
  • 2 teaspoons ground cinnamon
  • 250g gluten free self raising flour
  • 3 tablespoons dairy free milk
  • 100g walnuts, finely chopped
  • 75g dairy free chocolate chips

Method

  1. Preheat the oven to 180 oC
  2. Line an 8 hole muffin tin with paper cases
  3. Beat together the dairy free spread and brown sugar
  4. Stir in the mashed bananas, eggs, cinnamon and flour
  5. Add in the dairy free milk, chopped walnuts and chocolate chips
  6. Divide the mix between the 8 muffin cases
  7. Bake for 25 minutes
  8. Allow to cool before enjoying
