Gluten and Dairy Free Apple & Cardamom Muffins

Makes 8 muffins


  • 150g dairy free spread
  • 150g caster sugar
  • 3 eggs
  • 150g gluten free self raising flour
  • 2 medium sized apples, peeled, cored and diced
  • 1 teaspoon ground cardamom


  1. Preheat the oven to 180 oC
  2. Line a muffin tray with paper cases
  3. In a large bowl beat together the dairy free spread and caster sugar until light and fluffy
  4. Beat in the eggs one at a time
  5. Stir in the flour, apple pieces and cardamom
  6. Divide between the 8 muffin cases
  7. Bake in the oven for 20 minutes
  8. Allow to cool before serving
