Gluten and Dairy Free Tomatokeftedes (Greek Tomato Fritters)

  • 4 large ripe tomatoes
  • 1 medium onion, diced
  • 2 teaspoons oregano
  • 1 teaspoon thyme
  • 2 teaspoons parsley
  • 1 garlic clove, minced
  • salt and pepper for seasoning
  • 130g gluten free plain flour
  • 1 tablespoon lemon juice
  • 2 tablespoons water


  1. Sauce the onion and garlic in a shallow pan over a medium heat until soft, about 3-5 minutes
  2. Place the onion, diced, tomatoes, oregano, thyme and parsley in a large bowl
  3. Season to taste
  4. Stir in the flour, water and lemon juice to form a batter
  5. Chill for 30 minutes in the fridge
  6. Add a drizzle of olive oil to a shallow pan over a medium heat
  7. Add one tablespoon of mix for each fritter into the pan
  8. Cook for 2 minutes on each side, or until golden
  9. Serve with a fresh salad and lemon wedge
