Gluten and Dairy Free Self Saucing Chocolate Pudding

What tastes better than warm chocolate sponge with a rich sauce, all gluten and dairy free?

This pudding is one of these recipes that from the ingredients you can’t imagine what the final result will be. Pouring all that hot water onto raw cake mix just doesn’t seem right but trust me you get a great result every time.




For the sponge mix:

  • 150g gluten free self-raising flour
  • 150g caster sugar
  • 1 teaspoon xanthan gum
  • 2 tablespoons dairy free cocoa powder
  • 125ml dairy free milk
  • 30g dairy free spread, melted

For the sauce:

  • 425ml boiling water
  • 125g brown sugar
  • 4 tablespoons dairy free cocoa powder


  1. Preheat the oven to 180 oC
  2. Grease a 2 litre casserole dish
  3. Stir together the flour, caster sugar, xanthan gum, cocoa powder, dairy free milk and melted dairy free spread until well combined
  4. Pour the mixture into the baking dish
  5. Stir together the brown sugar and the 4 tablespoons of cocoa powder
  6. Sprinkle over the cake batter
  7. Pour the hot water gently into the casserole dish
  8. Place in the centre of the oven and bake for 50 minutes
  9. Serve with dairy free ice-cream
