Gluten and Dairy Free Madeira Cake

This cake is a family favourite, I use this recipe all the time and it was one of the first recipes I worked on adapting after diagnosis. I mainly use this recipe as the base for any celebration cake as it can easily be shaped and decorated into anything you like. A Madeira cake is denser than a Victoria sandwich making it easier to work with in cake decorating. Unfortunately it is denser due to the larger quantity of eggs so I apologise now if you are someone who can’t have eggs.

I also serve this cake plain at New Year as an alternative to fruit cake.

  • 450g gluten free self-raising flour
  • 400g caster sugar
  • 400g dairy free spread
  • 7 eggs
  • 50ml dairy free milk


  1. Preheat the oven to 150 oC
  2. Place all the ingredients in a large mixing bowl
  3. Beat with an electric whisk for 2-3 minutes
  4. Line a 9″ square cake tin
  5. Pour in the cake mix
  6. Bake for 2 hours
