This cake is a family favourite, I use this recipe all the time and it was one of the first recipes I worked on adapting after diagnosis. I mainly use this recipe as the base for any celebration cake as it can easily be shaped and decorated into anything you like. A Madeira cake is denser than a Victoria sandwich making it easier to work with in cake decorating. Unfortunately it is denser due to the larger quantity of eggs so I apologise now if you are someone who can’t have eggs.
I also serve this cake plain at New Year as an alternative to fruit cake.

- 450g gluten free self-raising flour
- 400g caster sugar
- 400g dairy free spread
- 7 eggs
- 50ml dairy free milk
- Preheat the oven to 150 oC
- Place all the ingredients in a large mixing bowl
- Beat with an electric whisk for 2-3 minutes
- Line a 9″ square cake tin
- Pour in the cake mix
- Bake for 2 hours
