Gluten and Dairy Free Banana Mocha Muffins with Chocolate Chips

These gluten and dairy free muffins have that lovely combination of coffee and chocolate but I’ve also decided to add in the banana to give another flavour. The banana also makes the muffins lovely and moist.




  • 225g dairy free spread
  • 225g caster sugar
  • 1 egg
  • 2 ripe bananas, mashed
  • 2 shots of espresso or 2 tablespoons of instant coffee dissolved in 2 tablespoons of boiling water
  • 275g gluten free self-raising flour
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum
  • 150g dairy free dark chocolate chips


  1. Preheat the oven to 180 oC
  2. Beat together the dairy free spread and caster sugar until light and fluffy
  3. Stir in the egg, mashed bananas and coffee
  4. Add the flour, baking powder, xanthan gum and mix well
  5. Stir through the chocolate chips until evenly distributed
  6. Line 2 muffins tins with paper cases
  7. Fill 3/4 if you want large muffins and bake for 30 minutes or half fill for smaller muffins and bake for 25 minutes
