Egg and Proscuitto Wrap with Avocado

This a super quick recipe to prepare and uses ingredients that are naturally gluten and dairy free. The idea behind it was replacing a traditional tortilla wrap with one made from egg to save on time in the morning.


  • 1 egg, beaten
  • salt and pepper, for seasoning
  • 1/2 teaspoon of mixed herbs
  • 2 slices of proscuitto ham
  • 1/2 avocado
  • 1/2 teaspoon of lemon juice
  • 1/2 teaspoon of coriander leaf
  • drizzle of olive oil


  • Heat, on a medium to high heat, a drizzle of olive oil in a 20cm frying pan
  • In a small bowl beat the egg
  • Add the seasoning and mixed herbs
  • Pour the egg into the pan, it will naturally spread into a circular shape

Egg Wrap

  • Cook for about 1 minute, the underside of the egg should be lightly browned and easy to flip over
  • Flip the egg and cook for another minute
  • Remove from the frying pan and lay two slices of proscuitto ham onto the egg
  • In a small bowl add the avocado, lemon juice, coriander, seasoning and mash into a smooth paste
  • Spread over the ham
  • Starting at one end tightly roll up the wrap
