Gluten and Dairy Free Roasted Cashew Nut & Honey Puffed Granola

Hello everyone

I’m away from a long weekend with friends in Dublin – there is plenty of gluten and dairy free choices so that is keeping me happy!  Had an amazing meal at the hotel last night with friends and I’ve just finished a lovely breakfast of gluten free bread with eggs, chorizo and avocado and of course a giant soya milk cappuccino.

I had a big bag of gluten free honey puffed rice I got in Holland and Barrett’s penny sale and was sick of it as a breakfast cereal on its own so I used it as a base for this granola.

I was trying to be arty with the photograph of it spilling out the jar – unfortunately the reality of the situation was the it went everywhere.  Poor Ollie cat who was minding his own business having his breakfast in the corner of the kitchen was unceremoniously showered in gluten free granola.

Despite the mess I was pretty happy with the granola, I hope you like the recipe too.

A Guide to Gluten and Dairy Free Brunch

Brunch, a portmanteau of breakfast and lunch, is my favourite meals of the day.  It is perfect for a social situation of catching up with friends and I also sometimes enjoy it for a bit of alone time to catch up on my website.

Just because you are gluten and/or dairy free it doesn’t mean you should miss out on the pleasure of a good brunch.  If you are stuck for inspiration then I’ve pulled together a few of my favourite sweet, savoury and drink brunch recipes.

Something to Drink?

Whether you prefer a hot or cold drink, or both like me, here are some ideas for fancy flavoured coffee, freshly squeezed juices and smoothies.

Gluten & Dairy Free Iced Latte with Homemade Cinnamon Syrup

It is really easy to make your own cold brew coffee and cinnamon flavoured syrup at home.  Add a splash of your favourite dairy free milk and you have the perfect iced latte.

Gluten and Dairy Free Peanut Butter Cup Latte

This latte is based on a peanut butter cup and combines the lovely chocolate and peanut flavours into the coffee.

Gluten and Dairy Free Blueberry and Pineapple Smoothie

The pretty colour of this smoothie alone makes it a must have for your brunch table.  On the plus side the combination of the blueberries and pineapple ensures it tastes as good as it looks.

Gluten and Dairy Free ACE Juice

I first tasted ACE juice in Rome – it is freshly squeezed orange, carrot and lemon juice.  It is named ACE after the vitamins the juice is packed full of.

Gluten and Dairy Free Apple Custard Cake

Hello everyone

I’m definitely well into my Autumn inspired baking.  I’ve made some new soup recipes, a hot mulled apple drink and this comforting apple and custard cake.

The custard is baked into this cake with lovely pieces of apples, cinnamon and sultanas for the perfect autumn cake/dessert.

It seemed to be a hit with the family, my niece had a small piece and then cried for some more!  My mum tried to order one for her birthday cake – a bit premature as she was born in April.

Anyway if you love the taste of apple and custard then this cake is for you.

Gluten and Dairy Free Saag Chicken

Hello everyone

I’m back with another curry recipe and this time for one of my favourites – Saag Chicken.  Basically it is a mild flavoured curry made with lots of spinach.  I was pretty pleased that the sauce kept the nice bright green colour of the spinach rather than turn that kind of murky colour spinach sometimes does.

You can make this curry in under 30 minutes so it is the perfect dinner for busy week nights.  Although it has quite a few ingredients listed hopefully you have a lot of them already in your store cupboard.

Gluten and Dairy Free Chilli Sweet Potato and Quinoa Soup

Hello everyone

A few weeks ago I shared a recipe for baked cheese and tomato quinoa and it was pretty popular.  I never know what to do with quinoa and a friend of mine had given me that recipe.  It proved to be pretty popular as a lot of you were in the same boat as me thinking quinoa is a great gluten free option but never sure what to do with it.

Pretty pleased with himself that the baked quinoa recipe was a hit he has shared this recipe for how to use it in a soup.  I love this soup and it will definitely become a favourite in my house, hope you guys like it too.

Gluten and Dairy Free Self Saucing Chocolate Peanut Butter Pudding

Hello everyone

Autumn definitely seems to be upon us now, the weather was ridiculously windy and rainy in Scotland yesterday.  I’ve started to make some more homely autumn recipes like this self saucing chocolate peanut pudding.

Self saucing puddings always look crazy when you are making them – it just doesn’t seem right to pour all that water over uncooked cake batter.   Luckily something magical happens in the oven and hey presto you end up with a beautiful sauce and a light sponge.

I quite like puddings like this when people are round for dinner because they are quick to put together and can bake in the oven ready to serve after you have finished your main – cuts out any faffing around from more intricate dessert recipes.  I think I  might try a lime version of a self saucing pudding for my next experiment.

Gluten and Dairy Free Peachy Pie Smoothie

Hello

I meant to feed back on my trip to Edinburgh zoo we had last weekend but never got round to it.  I was really impressed by the gluten and dairy free offerings in the cafe and restaurant.  The menu was clearly marked and it was easy for me to find a safe option for lunch and a treat for the afternoon.  I went for a hot wrap with skinny fries and a salad which was very good and for afternoon snack I opted for a cranberry flapjack with a soya pumpkin spiced latte.

This weeks recipes feel like they are saying good ye to summer with this bright peachy pie smoothie and hello to autumn with my new soup and pudding recipe.

Gluten and Dairy Free Thai Salmon Burgers

Hello everyone

I made these Thai flavoured salmon burgers to use up some leftover red Thai curry paste I had.  The burgers are really easy to make and best of all you can prep them in advance and then cook when you get home from work.

I served mine in a gluten free bun with spinach, tomato, sweet chilli sauce and gluten free onion rings for the ultimate burger experience.
