Gluten and Dairy Free Salted Peanut Chocolate Cookies

I’m not sure the reason why but I always tend to make a cake when I go into the kitchen to bake rather than biscuits or cookies.  I seem to be much more confident when developing a cake recipe than when I’m working on new biscuit ideas – no idea why though.

I made these cookies a few weeks back when it was snowing – as I had a broken arm I stayed indoors and made cookies rather then being out in the street shovelling snow with everyone else.  I did share the cookies with the people shovelling  snow though.

I’ve made these with salted peanuts as I love a salt and chocolate combination.  If you want a more traditional cookie you can substitute the salted peanuts for some dairy free chocolate chips.

Gluten and Dairy Free Cheese Waffles with Avocado & Fried Egg

Hello everyone

This is my ideal breakfast – I love anything that is pancake or waffle based.  When I’m down visiting friends in London we always got to the The Good Life Eatery for breakfast so I can get the gluten and dairy free waffles with mashed banana, berries and coconut yoghurt.

Today’s waffle is a take on eggs and avocado toast.  I’ve made the waffle with a little dairy free cheese added in for extra flavour.  You can adjust this recipe to suit your own taste – adding a poached egg for example or  if you don’t have a waffle iron then use the batter to make pancakes.

If you are short of time in the morning then you prep the batter mix the night before and store it in the fridge.

Gluten and Dairy Free Apple Fritters

Hello

I made these last Sunday for a little afternoon snack – perfect with a cup of coffee especially as the cold weather is back!  These apple fritters are really quick to make – just whisk together a batter similar to making pancakes and stir in the chopped apple.

I heated the leftover fritters in the oven next day and had them as a treat breakfast with some dairy free yoghurt and strawberries.

I’m very lucky that both my local Chinese and Indian takeaway make a couple of dishes that are gluten and dairy free and safe for me to enjoy as a little treat.  I do miss crispy sweet chilli beef though as that is not one of the dishes I can order.  I thought I would have a little go at making this dish at home – so if you are craving Chinese give this recipe a try.

Gluten and Dairy Free Bacon & Avocado Stuffed Omelette

What a week – I’m absolutely shattered and looking to just chilling out with my friend who is visiting from London.  I also need to spend sometime pulling together new recipes for the website.

I haven’t really found a shop bought gluten free tortilla wrap that I love.  I find they tend to be a little dry even if I try heating them in the microwave or in a pan.

I often make these filled omelettes as an alternative to breakfast burritos.  They can be made really quickly in the morning and are a great start to the day.  These omelettes also make a great quick lunch or dinner with a bowl of fries.
