Love it or loathe – it is Valentine’s Day next week.  Do you have something special planned, are you trying to avoid it altogether or do you just not care?  Either way I’ve pulled together a couple of my favourite gluten and dairy free recipes.

Gluten and Dairy Free Red Velvet Pancakes

Start Valentine’s Day with these pretty red velvet pancakes.  I’ve packed all the best bits of a red velvet cake into this breakfast dish.  The topping is dairy free cream cheese drizzle poured over fluffy red pancakes.

Gluten and Dairy Free Valentine Chocolate Cakes

You should always have a bit of chocolate on Valentine’s Day – even those of us that are dairy free!  These little triple layered chocolate cakes are really easy to make.  I’ve sandwiched them together with a homemade dairy free buttercream and decorated them with pretty Valentine themed bits and pieces.

These cupcakes would make a great little handmade gift for your gluten and dairy free loved one.  I’ve recently starting making a few more handmade gifts for birthdays and Christmas and people really appreciate the effort you have gone to.

Gluten and Dairy Free Lemon & Poppyseed Blueberry Parfaits

Hello everyone

This is my favourite breakfast at the moment, I had it 3 times last week.  I’m not a morning person at all so I love breakfasts that I can prepare the night before.  I got this cool little Kilner jar for my Christmas and it has been great for my on the go breakfasts.  

I’ve used Alpro dairy free vanilla yoghurt and jazzed it up a bit with some poppy seeds and lemon zest.  Then I’ve added a generous dollop of lemon curd, I usually make my own but I’ve noticed that Tesco’s own make lemon curd is naturally gluten and dairy free and only 65p.

Top that off with some gluten free granola and a handful of blueberries and you have the perfect grab and go breakfast.

15 Quick and Easy Gluten & Dairy Free Week Night Meals

Are you bored with the same meals for dinner every night?  I’ve pulled together a list of gluten and dairy free dinner recipes that are quick and easy to pull together on a busy week night.  Most of them are on the table in under 20 minutes.

  1. Gluten and  Dairy Free Mexican Chicken Sizzle

Have a Mexican evening with this lovely spiced chicken with onion and peppers.  I’ve served it with some salad, gluten free tortilla wraps, tortilla chips and let people help themselves.

2. Gluten and Dairy Free Thai Green Chicken Curry

I serve a lot of Thai curries in my house, they are really easy to put together, taste great and best of all a lot of the ingredients used in them are naturally gluten and dairy free.

3. Gluten and Dairy Free Balsamic Glazed Salmon

Salmon roasted in a beautiful balsamic glaze and served with sweet potato fries.  You can make this recipe simpler and quicker by using a shop bought balsamic glaze or preparing the glaze the night before.

4. Gluten and Dairy Free Saag Chicken

I love the bright colour of this curry and it is packed full of goodness from the spinach.  It is one of my quicker curries to put together but still has a great depth of flavour.

5. Gluten and Dairy Free Sundried Tomato Alfredo Pasta

Most pasta dishes are quick to prepare including making the sauce from scratch.  I think with the majority of my recipes you can make the sauce in the time it takes to cook the pasta.  This dish has a lovely dairy free creamy sauce with sundried tomatoes.

6. Gluten and Dairy Free Thai Basil Chicken

This recipe is a bit like a cross between a Thai curry and a stir fry – not sure how well that sells it!  Anyway it tastes amazing but don’t worry if you can’t get Thai Basil just use ordinary basil and most people won’t know the difference.

7. Gluten and Dairy Free Salmon Thai Burgers 

Rather than the normal beef burgers try something a bit different for dinner.  The salmon burgers can be prepared the night before to save a bit of time.  That way when you come home from work you just need to cook the salmon burgers and prepare the sides.

8. Gluten and Dairy Free Easy Chicken Korma

Rather than making this chicken korma from scratch I’ve cheated a bit and have used a korma paste.  This makes a really quick and easy but very tasty korma and a lot of curry pastes are naturally gluten and dairy free as well.

9.  Gluten and Dairy Free Summer Prawn Pasta

Prawns, courgette noodles and tomatoes are served with pasta shells in a light, lemon sauce.

10.  Gluten and Dairy Free Chicken and Cashew Noodles

When I go out for Thai food I always gravitate towards dishes that have cashew nuts in them – I love them in savoury dishes.  Rice noodles are naturally gluten free so are a great base for Thai dishes.

11. Gluten and Dairy Free Honey Sriracha Beef

Tender beef strips are coated in a simple honey and sriracha glaze then seared in a hot pan.  I served mine with roasted vegetables and fries.

12. Gluten and Dairy Free Sweet Potato Chilli Salmon Patties

You can make these sweet potato chilli salmon patties in advance, they store in the fridge overnight or you can put them in the freezer.  They are a little like a fishcakes but without the breadcrumb coating.

13. Gluten and Dairy Free Salmon Linguine

Flaked salmon served in a delicious creamy sauce over spaghetti.  I’ve also made my own gluten and dairy free garlic bread to serve as a side dish with the spaghetti.

14. Gluten and Dairy Free Smoked Chicken Sausage Pasta with Garlic Cream Sauce

One of my favourite pasta dishes, I love Marks & Spencer smoked chicken sausages.  They make a great addition to dishes like this and are also naturally gluten free.

15.  Gluten and Dairy Free Chilli Vegetable Stir Fry

If you are looking to increase your vegetable intake for the day then try this chilli vegetable stir fry.  Lots of vegetables with a sweet chilli sauce served on a bed of rice noodles.

Gluten and Dairy Free Creamy Paprika Chicken Pasta

Hello everyone

It took me so long to type up this recipe it is made from leftover Christmas turkey!  That can be our little secret though as the recipe is actually for a gluten and dairy free chicken pasta.  I just have some recipes that always fall to the bottom of the pile when I’m selecting what I’ll share with you for the week ahead.

I do enjoy a creamy pasta sauce, its not something you can easily get dairy free when eating out.  Gluten free pasta and tomato based sauces are readily available, which is great, but I still crave a dairy free creamy sauce.  This dish has chicken, onions and tomato in a lovely dairy free cream sauce with smoky paprika and lemon.  I made this using Alpro single cream and Tesco Free From penne pasta.

Now the website functionality is improved I’m back concentrating on new recipes.  I’ve got a few exciting recipes coming up soon including apple infused tea, Valentine chocolate cakes and Brazilian BBQ kebabs.  I’m also starting to think about some fun gluten and dairy recipes for pancake day, Mother’s Day and Easter.  I’m not sure why I associate every special day or holiday with baking something.

Gluten and Dairy Free Chocolate Peanut Muffins

Hello everyone

I’ve mentioned in a few posts in the last couple of weeks that I’ve been having problems with my website.  It had got really slow at loading and sometimes timed out and gave an error message.  It also took me ages to add anything to it and sometimes it wouldn’t let me into the admin page at all.  When I started the website four years it really was just to keep track of my some of my gluten and dairy free recipes.

I can’t believe how much it had grown over the years, how many visitors I have and how much it has become part of my everyday life.  It is my go to hobby and after a hard days work I like to unwind by thinking about new recipes to share.  I love creating new recipes in my kitchen and usually spend most Sunday mornings there.

Site Migration

Over the last few weeks I had become so frustrated with the poor performance website. I would rather be in the kitchen baking than reading about how to improve page speed.  Thankfully I’ve managed to solve all the issues: I’ve moved to managed WordPress hosting, optimised all my images and cleared up all the unnecessary files in the background.  Using the GTmetrix tool for measuring page load speed I’ve gone from an F (2% speed) to a gold A (91% speed) – yeah.  So hopefully you’ll benefit from a much easier site to navigate and I can get back to sharing recipes with you.

New Recipe

Amongst all the website drama I did do a bit of baking last weekend and thought I would share the recipe with you guys.  Chocolatey muffins with a dollop of peanut butter on top which magically melts into the muffin to create a kind of peanut core, and all gluten and dairy free.

Gluten and Dairy Free Potato Waffles

Hello everyone

Hope you have all had a great Monday – it’s the start of the working week for me and I’m always super organised.  Breakfast prepped, healthy packed lunch prepared, outfit for the next day ironed and looked out.  Unfortunately this doesn’t last much past Wednesday for me and by Thursday and Friday I’m pretty much in disorganised chaos.  Anyone else like that or is it just me?

It has been so cold today I’m really hoping it isn’t going to snow – when it snowed last year it took me about 4 hours to get home from work rather than the usual 14 minute train ride so fingers crossed it won’t be a repeat of that this year.

Tonight’s recipe is for a real kiddy favourite – potato waffles!  The best bit of the potato is always the crispy top you get from a dish like Shepard’s Pie – these waffles are all about the crispy bit with a lovely fluffy potato filling.  Perfect for a tasty lunch or as a side to any dinner or actually you could have these for breakfast with poached eggs and avocado.

Gluten Free Vegan Banana Pancakes

Hello everyone

Pancakes are still one of my favourite breakfasts. I like to spend a Sunday morning enjoying a big plate of pancakes while I type up my recipes for the coming week.

I have a tonne of pancakes recipes on my website already from red velvet to peanut butter and jelly.  This time I decided to focus on a gluten and dairy free recipe that was also egg free but tasted lovely and fluffy.

Gluten Free Vegan BBQ Jackfruit Buns

Hello everyone

I’v had jackfruit on my list to check out for ages now and I thought what better time to create a recipe than now.  A lot of you have got in touch to say they are doing Veganuary and did I have any recipes suitable for people also on a gluten free diet.

Even if you aren’t into the whole Veganuary thing it is still a fun recipe to try out.

Some cool facts about jackfruit:

  • it comes from the same family as the fig and mulberry
  • one tree produces 3 tonnes of jackfruit
  • one jackfruit can weigh up to 55kg
  • Unripened or young jackfruit has a meat like texture and can be used in savoury recipes
  • Ripe jackfruit flesh is much sweeter and can be used in sweet dishes

You can buy canned young jackfruit in most Asian supermarkets and I’ve seen it recently in both Tesco and Waitrose.
