I was super excited last week to find some dairy free coconut condensed milk which I bought here –> http://www.veganstore.co.uk/

Finding a dairy free condensed milk has opened up a number of new recipe possibilities for me to try out.

One of things I really miss is soft chewy toffee.  When I was little my parents always bought me a big box of Thornton’s Special Toffee for Christmas every year – I loved the stuff.

This recipe is very easy to make, it doesn’t require sugar thermometers or anything fancy.  I kept my toffee in the fridge to keep it fresh and the perfect chewy consistency.

Tell us a little bit about your blog?

My blog is a gluten free food and lifestyle blog with some recipes embracing my greek heritage. I like to add my own twist to traditional greek recipes.

What inspired you to write the blog?

I was diagnosed with coeliac disease in 2012, and the first year or so was quite a struggle and it made me sad not being able to eat the things that I loved and I felt a little isolated. In 2015, I decided to create my blog The Gluten Free Greek to help others embrace the gluten free lifestyle and be part of a community of bloggers!

What are your favourite ingredients to cook with?

Oregano, olive oil and feta cheese!

What is your favourite cook book?

I have quite a few, but I do like Gluten Free on a shoestring by Nicole Hunn.

If you visit anywhere in the world for dinner tonight where would you go?

Gluten Free Greek Style Omelette

Serves 4

Ingredients

  • 1 white onion
  • 1 courgette sliced
  • 225g halloumi
  • 3 potatoes peeled and thinly sliced
  • 6 medium/large eggs
  • handful tomatoes
  • 1 red or yellow pepper sliced
  • sprinkling of oregano

Instructions

  1. In a large frying pan, add sunflower or vegetable oil, enough to fully cover the onions and potatoes.
  2. Add in the onions first. Then the potatoes. Leave for 10 to 15 minutes on high heat until caramelised.
  3. In another non stick pan, fry the courgettes, the halloumi and the peppers. Sprinkle some oregano. Lastly add the tomatoes.
  4. In a large bowl, crack 6 eggs. Drain the onions and potatoes, and save the oil. Place the onions and potatoes on the top of the eggs. Add in the halloumi, the courgettes, the peppers and the tomatoes. Add in a pinch of salt. Give the mixture a stir with a spoon, don’t whisk.
  5. Cover the bowl with foil and leave for 10 to 15 mins.
  6. In the non stick pan, add the mixture. Put on high heat for 2 mins, then low heat for another 2 minutes.
  7. Flip onto a plate and repeat this process twice. You can also place in the oven if you wish.
  8. To check its done, simply touch it, and if it bounces back it should be ready or pierce it with a knife to check.
  9. Plate up and enjoy with a greek salad, olives and delicious bread! Kali Orexi!

Gluten and Dairy Free Blueberry Crumble

Hello everyone

Hope you are all having a good Saturday.  I’m just catching up on a few things before my niece visits this afternoon.  She is 9 months old and has developed an obsession with my cat, which of course I love.  Ollie however is not so keen and tends to prefer to watch from a distant.

I’ve also got some photography that I want to do for the website.  I’ve recently just acquired a new tabletop background board for my photos and can’t wait to try it out later today.  The two recipes I’m working on just now is a proper strawberry milkshake and some soft chewy toffee.

The final recipe of this week is blueberry crumble.  A traditional dessert that is really easy to put together but still one of the most satisfying.  I’ve made this recipe to serve two in individual dishes but you can double the ingredients, put in a large casserole dish and increase the cooking time if making for a larger group.

Gluten and Dairy Free Chicken and Cashew Noodles

Hope you are all having a good week so far.  I can’t believe that it is Thursday already – quick week.

As some of you will have seen on social media I was excited this week to get some dairy free condensed milk and a few other bits and pieces.  Thanks for all your suggestions – I’m between making a key lime pie or some toffee. I’ll decide at the weekend and post the recipe if my experiment is successful.

Tonight’s recipe is for this simple but very tasty chicken and cashew noodle dish.  I made this with naturally gluten free flat rice noodles I got in Tesco.

Gluten and Dairy Free Chicken and Cashew Noodles

Gluten and Dairy Free Strawberry Cupcakes with Dark Chocolate Frosting

Hello everyone

I made these cupcakes for an afternoon tea treat when I had family visiting.  Unfortunately after I made the strawberry cupcakes and the chocolate frosting I reached into the drawer for a piping bag and realised I had run out.  This made me instantly mad and I tried very unsuccessfully to make one out of a freezer bag.  Trust me on this one – don’t try it unless you want covered in frosting!

Anyway I opted just to spread the icing on but I’m not convinced they are as pretty as they could of been if I was more organised.  Forgetting all the piping bag drama these cupcakes are worth making.  They don’t take a lot of time to put together but the little strawberry surprise in the middle of the cupcake perfectly compliments the rich dark chocolate frosting.

Gluten and Dairy Free Smoked Bacon & Haddock Chowder

Hello everyone

I’m back home from an amazing trip to Germany.  It was really easy to get gluten and dairy free food – I’ll write up a little article about my experiences and share the usual pictures of what I had to eat and where about incase any of you are visiting the area.

Today’s recipe is for hearty smoked bacon and haddock chowder.  I’ve had this recipe photographed for a while but never got round to sharing it.

It is pretty simple to make, packed full of flavour and is something a little bit different for dinner or lunch.

I’ve been working on a  recipe for dark chocolate chip and cinnamon blondies which I’m hoping to bake and photograph today.  Fingers crossed they work out well and I can share the recipe with you soon.

Gluten and Dairy Free Smoked Bacon & Haddock Chowder

Gluten and Dairy Free Cheesy Potato Bake

This recipe is based a little on potato dauphinois and a bit on another French dish I can’t quite remember the name of but enjoyed when I was in Paris.  So rather than give it a fancy name I’ve just gone with the simple Cheesy Potato Bake.

This is perfect as a meal on its own or as a side dish – I usually just eat it all as a main.  It is layers of lovely roasted onion, crispy bacon, fluffy potato slices in a creamy sauce topped with melted cheese.  It probably isn’t the healthiest dish on the planet but it sure is one of the most comforting.

I used Violife dairy free cheese and Alpro cream to make this dish.  I did burn the top of the cheese a little as I got distracted by something else.  I photographed it anyway as this website is just a catalogue of what I’m eating.
