Gluten and Dairy Free Banana PB Choc Ices

Hello everyone

I’ve had gluten and dairy free choc ices on my to do list for ages now and I’ve finally got round to it.  I picked a simple to put together banana and peanut butter filling.  If you want to make another flavour you can use any of the ice cream recipes I have on my website.

They aren’t as difficult to make as I thought they would be.  It’s just having the confidence to dip a frozen ice cream into warm melted chocolate!  Hope you enjoy them as a lovely summer treat.

Tell us a little bit about your blog?

My YouTube channel is about helping young people like myself living with coeliac disease by sharing my advice, tips, recipes on how to make it enjoyable as well as easier.

What inspired you to write the blog?

There are not many young youtubers with coeliac to help younger people out so that’s why I decided to help people with the things I was I got help with at the start. I was diagnosed 9 years ago and I’m 17 now so it’s been a long time and I have gone through the change in how allergies are perceived compared with now so I wanted to try and make a difference.

What are your favourite ingredients to cook with?

I love making things with mustard powder! It’s sounds wierd but the taste is not what you expect. I love putting them into by breads and scones mainly as it just adds this extra amazing flavour!

What is your favourite cook book?

My all time favourite is 5 ingredients book by Jamie Oliver it’s just so easy and uses ingredients we all own. Most of the stuff is gluten free so it means I get to choose from a huge selection.

If you visit anywhere in the world for dinner tonight where would you go?

I would have a Chinese if they ever made it gluten free!

Gluten and Dairy Free Don’t Be Blue Be Cherry Smoothie

Hello everyone

I feel like I’ve had a bit of an over indulgent few weeks of eating.  First I was on holiday to Germany and food a cake shop that did amazing gluten and dairy free gateaux so needless to say I could be found hanging around in there most days.

Then my buddy that loves food as much as I do visited for a few days and we did a good amount of eating out, takeaways and snacking.

To try and make up for that I’m going to go back to having a homemade smoothie for my morning snack at work all of next week.  I’ve kick started it with my Gluten and Dairy Free Don’t Be Blue Be Cherry Smoothie.

This delicious smoothie has a base of apple juice with cherries, blueberries and banana.  I’ve also added in a good handful of spinach so you can get your greens without realising.  I’m still like a child that way – you have to hide my vegetables to get me to eat them.

Gluten and Dairy Free Chocolate Peanut Butter Pop Tarts

Hello everyone

Last week a lot of cool stuff happened with the blog.  It started when I was FeedSpot’s top gluten and dairy free UK blogger, continuing into a really lovely positive reaction to my new profile picture and then one my recipes appearing on Gluten Free Heaven.  The good vibe is continuing into this week as I’m featured on Cut Out & Keep as their Cooking Superstar.  Over the week there will be an interview with me and I’ll be sharing one of my favourite gluten and dairy free recipes everyday.  Check out the fun community at https://www.cutoutandkeep.net

I’ve been working for a while on trying to create a kind of puff pastry that is both gluten and dairy free, is simple to make and is quick to make.  I think I have finally found one that I’m happy with and I can adapt it to both sweet and savoury.  Similar to me finding a good dairy free condensed milk last week, it opens up a lot of new recipe I can create.  I’m thinking things like apple turnover, sausage rolls, Danish pastries – this is going to be bad for my waistline!

If you don’t fancy the chocolate and peanut butter filling then you can easily swap it for any kind of fruit filling.

Gluten and Dairy Free Scottish Tablet

Hello Everyone

Being Scottish myself I’m glad to have finally managed to make a dairy free version of tablet.  When I was a little girl (before the days of a packed in pancreas and I was able to eat milk) I tired making tablet and it never set properly.

I’ve done a bit of research into the tips and tricks of making good tablet.  I think where I was going wrong years ago was not beating or whisking it after I cooked it.  My next hurdle to get over was trying to find appropriate dairy free alternatives to make a good tablet.

I made this tablet using Nature’s Charm Coconut Condensed Milk, caster sugar, dairy free soya milk and Pure dairy free spread.

Gluten and Dairy Free Peanut Butter & Jelly Overnight Oats

Hello everyone

I made this recipe ages ago and just realised I hadn’t got round to sharing it with you all.  I love overnight oat recipes as I’m not a morning person at all so I love the idea of just reaching into the fridge for breakfast.  Also if I’m having a super disorganised morning they are perfect just to pop into my handbag to enjoy when I get to the office.

I’ve gone with my one of my favourite combinations – peanut butter and jelly.  I’ve made peanut butter flavoured oats and topped it with a vibrant fresh raspberry compote.

I also have an apple gingerbread version of this recipe, which sounds a bit odd but tastes great.  I’ll share that in a few weeks with you all.

Gluten and Dairy Free Salmon Linguine

Hello everyone

This is one of my regular go to pasta dinners.  It has a light creamy sauce, dairy free of course, with beautiful flakes of salmon and fresh herbs.

It is one of those recipes that never fails to disappoint, it also looks and tastes like you went to more effort than you actually did.

To make this recipe I used Tesco FreeFrom Spaghetti and Alpro dairy free cream. I also made the garlic bread in the photo with Warbuton’s gluten free Artisan classic white loaf with crushed garlic and basil mixed into Pure dairy free spread.

Gluten and Dairy Free Salmon Linguine

Gluten and Dairy Free Proper Strawberry Milk

Hello

Hope you are all having a good evening so far.  I’m just heading out to the airport to pick up my friend who is staying for a couple of days so looking forward to a long weekend off work.

Tonight’s recipe is for proper strawberry milk which is of course gluten and dairy free.  I’ve put the word proper in the title as this isn’t sugary sweet flavoured milk you would pick up at the supermarket.  It is 50% dairy free milk and 50% real strawberries – with a little bit of maple syrup to sweeten.

I topped mine with some whipped coconut cream I had leftover from another dessert I had made for an extra luxurious finish.  I loved this milk so much I’m going to experiment with all sorts of different flavours.
