Gluten and Dairy Free Sweet Chilli Salad Bowl

I’ve had this recipe typed up and sitting without a photograph for what seems like ages.  I picked up this pretty bowl in Penrith on my travels and it is perfect for this sweet chilli salad photo.  I finally got round to making it for lunch on Saturday and luckily it was as tasty as I had hoped.

It is based on a Korean dish called Bibimbap –  which literally means mixed rice.  The traditional version is a base of rice with sautéed vegetables, chicken, a chilli pepper sauce and either a raw or a fried egg.  I’ve made this lighter salad version which is perfect for either lunch or dinner.

Gluten and Dairy Free Creamy Orange & Mango Smoothie

Hello everyone

I spent a few hours going through the recipes that I needed to share on the website – this one falls into the category of being typed up but missing a photograph.  I try to be organised but I have recipes and photos all over the place – things written on spare pieces of paper in a folder, some in a notebook and some typed up on my computer.  I also have a  mix on the computer of recipes typed up with no photographs and edited photographs with no recipes. I’m planning on spending the next few weeks sorting through everything rather than keeping working on new things.

Today’s recipe is for this simple but delicious smoothie – very creamy from the banana and dairy free natural yoghurt.  Smoothies came to popularity in California beaches in the mid 1960s and were traditionally made from ice, orange juice and strawberries.  They replaced milkshakes, flavoured with fruit syrups, in popularity due to the invention and mass marketing of the blender.  It wasn’t until years later that smoothie varieties expanded to include dairy, vegetables and a wide variety of fruit.

Salted caramel seems to be everywhere for ages now – from ice cream to chocolates and even salted caramel lattes.  It originated in Brittany where a traditional treat is heavily salted butter caramels.  The flavour combination reached the world stage when Pierre Herme, a Parisian pastry chef, made a much celebrated salted caramel macaron in the 1990s.  It then became popular in restaurants across America and finally crossed over into big brands with Starbucks and Häagen-Dazs among the first to introduce salted caramel products.

I decided to top these apple cupcakes with salted caramel frosting but if you don’t fancy the salt you can easily leave it out.  I make my own dairy free caramel sauce and I’ve included a link to the recipe.  If you are just gluten free and don’t want to go to the hassle of making dairy free caramel then you can use shop bought caramel.

Gluten and Dairy Free Peanut Butter & Jelly Blondies

It is so exciting finally seeing the sun and perfect timing for me as I’m on a family holiday in the Lake District.  This is my eight month old neice’s first holiday and she is amazed by it all.  She went on a little boat trip at the beautiful lake and park at Keswick.

Find of the holiday for me was the gluten and dairy free beer battered fish and chips at Dockray Halls in Penrith – outstanding.

As my regular followers will know – I love peanut butter.  If you agree with me then these peanut butter and jelly blondies will appeal to you.  Sticky peanut bars topped with sharp raspberries – the perfect combination.

Gluten and Dairy Free Asian Chicken Noodle Soup

This recipe is perfect to make if you have some cooked leftover chicken to use up.  It is so quick to put together and it has to be one of my favourite soups of all time.

I use vermicelli rice noodles as they are naturally gluten free and can be picked up fairly cheaply in the supermarket Asian section.

Gluten and Dairy Free Salmon & Potato Curry

Hello everyone

Yeah the sun is out and I’m on holiday next week so it is all good news here.  I’m a big lover of Indian food but always tend to eat far too much of it.  I usually go for onion bhajis, chicken parthia, rice and poppadoms – basically the full works!

For tonight’s recipe I’ve made a curry that is lighter but is still full of that special Indian flavour.  Rather than my traditional chicken and rice for the protein and carbs I’ve gone with salmon and potato in a light creamy tomato sauce.
