A few years ago I made some Valentine cupcakes and photographed them to be included in a blog post for Udi’s gluten free UK.  As most of you remember Udi’s sadly withdrew from the gluten free market.  I thought I would dig out the recipe and photographs and share them on my blog for Valentine’s Day.

I’m back on the train again heading home so I thought I would try and get organised for the week ahead.  I’ve planned out what meals I want to make, order my Tesco shopping and now I’m working on the posts for the website.  I much prefer getting the train as door to door it takes about the same time as flying for me but I prefer just sitting relaxing on the train and using the time to get things done.

I’m going through a little phase of having different flavours of porridge for breakfast hence why there has been a few new porridge recipes recently.  I think the last one I shared with you was blueberry muffins flavour.  This porridge is inspired by the famous American flavour combination of peanut butter and jelly.  If you can’t have peanuts you can substitute it with a seed butter or just miss it out completely.

Gluten and Dairy Free Blueberry Cinnamon Pancakes

Hello everyone

I’ve had a great week so far.  I moaned a lot about my eye injury I had a few weeks ago and I’m happy to report I now have an artificial lens which has helped a lot.  I’ve also been down in London for a few days and we had an amazing tour of the Globe Theatre.  My favourite story I learned was about the first theatre that was built in London in the 1500s.  In those days the perimeter of London city stopped at the river bank so when theatres were outlawed they moved to the other side of the Thames.  The Burbages that built the first theatre owned the theatre but not the land it was built on.  Not wanting to loose their precious theatre when they were banned, they waited til the landlord was on Christmas holiday, dismantled the wooden theatre piece by piece and transported it across the Thames, which was frozen solid during the great freeze and rebuilt it there.

The summer theatre program starts on 23rd of April (Shakespeare’s birthday) and closes at the end of September as it is an outdoor theatre.  We are hoping to go and see a show this summer – fingers crossed it isn’t raining.

Back to more food related chat now.  As it is pancake day next Tuesday I thought I would share a new gluten and dairy free pancake recipe with you all.  You can leave out the cinnamon if you are not a fan and can substitute the blueberries for any other berry you prefer.

I’ll share my favourite gluten and dairy free pancake recipes with you next Tuesday to celebrate pancake day.

Gluten and Dairy Free Basil Pesto Chicken

One of the things I miss the most about having to be gluten free is great sandwiches! It can be difficult to get decent bread to make the sandwich at home and you don’t often see hot sandwiches on the menu suitable for coeliacs when eating out.

I put together this chicken pesto sandwich to use the last of the basil pesto I had made. I used the Schär panini rolls and Violife dairy free cheese.

Gluten and Dairy Free Spiced Pineapple Muffins

Hello

I’m on a longish train journey tonight so I’m doing some work on the website.  I’m getting the rest of the posts for this week typed up, preparing my feature on meal prep and noting down some new ideas for the coming weeks.

I used a can of crushed pineapple to make these muffins and made sure I drained away the juice so the muffins weren’t too sticky.  You could also use fresh pineapple and pop it into the food processor to get little pineapple pieces.

Homemade Tomato Ketchup (Gluten & Dairy Free)

I’ve had on my list to try to out a homemade tomato ketchup recipe which is naturally gluten and dairy free.  It was so much simpler than I thought it would be and in my opinion it tastes great.  I also used the last of this sauce to top a gluten free pizza base and it worked well for that purpose too.

Last week I was all about trying to be more organised and prepared for the week ahead.  I made a few gluten and dairy free meal prep dishes for breakfast, lunch and dinner which worked really well.  I’ll share the recipes when I get round to writing them up.

I’ve also been trying to organise my clothes and have been cataloguing them on an app which then lets you plan ahead what you are going to wear.  This might sound crazy to some people but I love clothes as much as I love food.
