I’ve just realised I’ve not planned the website very well this week and I actually have two breakfast recipes rather than my usual mix. I’m not sure why but I find breakfast recipes the easiest to create and think of new recipes. Dinner and baking ideas are somewhere in the middle and lunch is definitely the most difficult for me.
Today’s post is for a super simple breakfast idea I made when I was looking to use up some of homemade dairy free basil pesto. I didn’t have time to make my own flatbreads so I’ve used a gluten free pitta bread. This has been lightly toasted, topped with my homemade pesto and a soft poached egg. I’ve added some cherry tomatoes, rocket and dairy free cheese which I’ve used my potato peeler to get thin cheese slices.
