It’s a wet miserable day in Scotland so this dish is a perfect winter warmer. It’s not an easy dish to photograph – I don’t find anything in a casserole dish like this makes for a great photograph. Luckily it makes up for it on the taste front!
I made bbq pulled pork buns the other day and the leftovers was used as a basis for this recipe. I’ve made a smokey paprika tomato sauce, stirred through the pulled pork and topped with slices of (dairy free) creamy potato. Baked in the oven until golden and bubbling this is total comfort food.
