I’m glad it’s Friday – its been another busy week. I’m looking forward to heading into Edinburgh tomorrow for a visit to Sugar Daddy’s gluten free bakery.
This is my take on chicken parmesan but I felt that I couldn’t call it that given it is dairy free! I’ve chicken breast coated in crispy gluten free breadcrumbs and baked topped with a tomato sauce and dairy free cheese. I also served mine with a side of pasta and some fresh spinach.
