I know I have a recipe website but I must say I’ve never cooked so much over the last four months! I’m used to grabbing breakfast on the way to work a couple of times a week, same with lunch and then I would often have a dinner out or round at family’s house. I’ve been digging into the archives of my website to get some meal plan inspiration for the week ahead.
When I’m having a savoury breakfast I’m a big fan of Mexican flavours. Actually as I’m typing this up I’m enjoying a scrambled egg and guacamole taco! I’ve used a gluten free soft tortilla and topped it with wilted spinach, chorizo, sliced boiled egg, avocado, cherry tomatoes and spring onions.
