I have in my cooking notepad that I wanted to make some sort of breakfast pizza and I kind of had that in my mind when I started this recipe but ended up with a pastry instead. My recipes tend to evolve based on what I have in the fridge at the moment I go to make it – I’ll keep the breakfast pizza in mind for another recipe soon. I’ve been spending a spare hour or so working on writing up my recipes – I like them to be organised in journals like this:
Today’s tart would be perfect to enjoy on a lazy Sunday morning for brunch and is super quick to make now you can buy gluten and dairy free pastry from the supermarket. I’ve topped it with a little dairy free cream cheese. smoked salmon, avocado, rocket and a sprinkle of red onion and chives.
