According to French lore, onion soup was invented when King Louis XV was out hunting and found himself stranded late at night in a hunting lodge. The story states the only things in the cupboard were onions, butter and champagne resulting in the first French Onion soup. This is probably just a fable but I love these little history of food tales. It is thought the dish evolved to have a large cheese crouton to make it a more hearty meal.
I’ve had this on my to do list for absolutely ages after having a gluten and dairy free version in a little French bistro. Definitely glad I took the time to get round to adding it to my recipe collection.
