I didn’t really make any serious New Year’s resolutions but I do find January a great time to take stock of what I currently do and how I want to improve it over the year. This time I’m taking a more structured approach to how I plan my recipes for the year and I want to spend more time writing my blog posts. I don’t tend to share much more in them than this is today’s recipe so I’ll try and make them a bit more exciting this year.
Final post of the week is coconut yoghurt chia seed pudding which also happens to be vegan as well. My favourite type of dairy free yoghurt is coconut yoghurt as it has the creaminess of dairy yoghurt. This little pot is the perfect breakfast to prep ahead if you are having a busy week. You can also change the fruit to whatever you like for the topping.
