I must start this post by apologising to my long time followers who will have seen this post before. I share it every year as it is the most requested recipe I have over the festive season.
Each year I make this pudding in December and we enjoy it as a family. I had never made a Christmas pudding until I was diagnosed with coeliac. The first Christmas I bought a shop bought pudding but it really wasn’t that great so I have made my own ever since.
It takes a little bit of planning but isn’t a technically difficult recipe to make. You need to soak the fruit base overnight and make sure you have left enough time the next day to steam the pudding. You can then store it in the cupboard for the big day and heat it up in the microwave.
