I’ve made it to the end of another ridiculously busy week and I’m travelling to London for a long weekend. I’m trying to spend my travel time wisely and get ahead with tying up my recipes for the website rather than fritter the time away doing nothing constructive. I’m also pleased to report that there is a choice of gluten free options on the breakfast menu including porridge and a bacon roll.
My newest pasta creation shows how much I love chorizo and there is a lot of it on top of this pasta dish! Watch out as some chorizo does have sausage in the ingredients but it is easy to find ones that don’t in the supermarket. The pasta is coated in a dairy free creamy sauce with tomatoes, onion, mushroom and spinach – a quick week night meal without compromising on the flavour.
