I’ve written about quinoa a couple of times on my website – always the same story! I think it is a great naturally gluten free grain but I’m never very sure what to do with it. I have a friend that uses it a lot and always look to him for quinoa inspiration.
A few weeks ago I shared a recipe using polenta as an alternative porridge as I know a lot of you avoid gluten free oats. The recipe got me thinking about other alternatives and I’ve made this quinoa breakfast bowl.
I’ve cooked the quinoa in some almond milk with maple syrup and some cinnamon. I’ve served it with banana, blueberries and strawberries for a great start to the day. Remember to rinse your quinoa before cooking it to remove the bitterness.
