I’m looking forward to this week – it is my niece and I’s birthday and I have a few days off work so we can do some fun things to celebrate. If the weather is good on Thursday we are planning a trip to the zoo – last time I was there they catered really well for special diets.
I can still be a bit of a child when it comes to eating my green vegetables. I prefer broccoli like this when it is chopped up through the dish – I don’t think I’ll ever grow up! I’ve made this pasta bake with a dairy free creamy sauce, chicken, onion, peppers, broccoli and mushrooms. Leftovers from this dish also made a great packed lunch for work the next day.
