I love a great big comforting bowl of pasta after a long day at work. Even though I’m gluten free I still enjoy my carbohydrates and I do like my pasta with a creamy sauce even though I can’t have dairy.
The base of this pasta dish is pan fried chicken, mushrooms, onion and tomatoes. I’ve then make a light sauce from dairy free basil pesto and milk.
I actually prepped this dish last Sunday when I was making my dinner and then reheated it after work on the Monday night. It actually worked really well as a dish you make the day before if you are struggling for time during the week.
