I’m way behind with my recipes this week. I made the mistake of not getting everything set up and ready to go for the week on Sunday morning. Combine that with a busy week at work and a few nights out and I had only finished two of my previously planned four articles. This week I’ll try and be a bit more organised, the freezing cold rain and snow this weekend will keep me indoors and give me time to get caught up before another busy week.
This is the final post for this week and I’ve been in the kitchen baking. I like to make a batch of muffins and freeze them so I have an emergency breakfast or snack to hand when required. I was in a little café in Glasgow ages ago and the gluten and dairy free option was a spiced mango muffin. They had heated it slightly and I enjoyed it with my soya cappuccino while catching up with a friend. I had always meant to try that flavour combination at home and here it is, found in the deepest darkest corner of my recipe notebook.
