I’m away from a long weekend with friends in Dublin – there is plenty of gluten and dairy free choices so that is keeping me happy! Had an amazing meal at the hotel last night with friends and I’ve just finished a lovely breakfast of gluten free bread with eggs, chorizo and avocado and of course a giant soya milk cappuccino.
I had a big bag of gluten free honey puffed rice I got in Holland and Barrett’s penny sale and was sick of it as a breakfast cereal on its own so I used it as a base for this granola.
I was trying to be arty with the photograph of it spilling out the jar – unfortunately the reality of the situation was the it went everywhere. Poor Ollie cat who was minding his own business having his breakfast in the corner of the kitchen was unceremoniously showered in gluten free granola.
Despite the mess I was pretty happy with the granola, I hope you like the recipe too.
