Today’s recipe is all about quinoa and I’ll start by saying this isn’t my recipe. A few weeks ago I was introduced by a friend to a new buddy who happened not to eat wheat or dairy. We got chatting about food and for some reason quinoa in particular. I don’t eat quinoa a lot as I’m not often sure what to do with it – he eats it a lot and has kindly passed on a number of his quinoa recipes.
This recipe makes a kind of crust less quiche, it can be eaten hot or cold and slices into wedges really well. I had some hot the day I made it and then took what was left into work for lunch the next day with a salad.
