Gluten and Dairy Free Caramel Chocolate Bars

Hello everyone

Sometimes it can be difficult to get exciting flavours of dairy free chocolate – it is probably most easily found as a bar of dark chocolate.  I’m trying out making some of my own filled chocolate bars.

I’ve started with a caramel filling – think of a curly wurly but in the shape of a traditional chocolate bar.

For future experiments I’m thinking mint crunch, peanut butter, strawberry and honeycomb (not all in the same bar).

What would be your favourite chocolate bar?

Gluten and Dairy Free Cheese and Tomato Baked Quinoa

Hello everyone

Today’s recipe is all about quinoa and I’ll start by saying this isn’t my recipe.  A few weeks ago I was introduced by a friend to a new buddy who happened not to eat wheat or dairy.  We got chatting about food and for some reason quinoa in particular.  I don’t eat quinoa a lot as I’m not often sure what to do with it – he eats it a lot and has kindly passed on a number of his quinoa recipes.

This recipe makes a kind of crust less quiche, it can be eaten hot or cold and slices into wedges really well.  I had some hot the day I made it and then took what was left into work for lunch the next day with a salad.

Gluten and Dairy Free Lemon Iced Tea

Hello

I seem to have added a lot of cold drinks to the website recently.  I think it has been a result of it being so hot this summer.  Amongst all the smoothies, juices and iced lattes I realised I didn’t have any iced tea recipes.

This is really easy to make, it is just tea and lemon juice mixed with the sweetener of your choice.  A big jug of this in the fridge is always welcome when it is roasting hot outside.  Unfortunately as I write this it is raining so after moaning about it being too hot I’m now complaining I miss the sun.

Hello everyone

I was super excited this summer as the plum tree in my garden actually had fruit on it for the first time.

My sister and mum both took away a load of plums and made jam.  I decided  to stew what was leftover and use for various bits and pieces.

I made this little gluten and dairy free breakfast pot and thought I would share the recipe with you guys in case you are looking for new ideas for breakfast.

Gluten and Dairy Free Dhansak

Hello everyone

This recipe featured in my Friday Night Fakeaways video but I thought it still deserved its own blog post and recipe share slot.  I made this for dinner one night when my parents were round and it definitely got the thumbs up.

Dhansak is a curry from the Parsi Zoroastrian community made with meat, vegetables and lentils.   I made a chicken version but I think the traditional way is with lamb.

Last week was proper chaotic in and out of work so I’m got my fingers crossed for a more stress free, organised week.

Gluten and Dairy Free Peanut Butter Cup Latte

Hello everyone

I absolutely love my coffees – I do enjoy just a plain cappuccino but every so often I do like a fancy flavoured coffee.  After the excitement of making homemade cinnamon syrup for my iced lattes I thought I would have a shot at making some flavoured coffees.

This one incorporates the flavours of peanut butter cups.  I’ve melted some dairy free dark chocolate and peanut butter into the dairy free milk.  This added to a coffee shot gives a nice gentle flavour which isn’t too sweet or sickly.  I’ll work on some new flavour combinations soon.

Gluten and Dairy Free Smokey BBQ Ribs

Hello everyone

Ribs is one of my favourite dinners but you often find that the BBQ sauce can have gluten in it so you have to be careful.  I’ve experimented with cooking ribs a number of ways and have settled on this method.

I boil them for an hour, cover in BBQ sauce then roast in the oven – simple.  To keep this recipe very easy I’ve actually cheated and not made my BBQ sauce from scratch.  I want to make sure I have a good mix of easy to prepare recipes and this one is easy peasy.

Gluten and Dairy Free Smokey BBQ Ribs

Eva’s Gluten and Dairy Free 1st Birthday Cake

Hello

It was my niece’s first birthday last week so I decided to make her a cake.  I wanted to make an illusion cake and gathered up some dairy free chocolate bars and smarties (mainly from The Vegan Store, link in the recipe).

The cake does take a little patience to make but you can make it in stages.  I made the chocolate cigarillos in advance, baked the cake in the morning and then did some decorating in the afternoon.

Eva had a little bit of her cake to try, her first bit of birthday cake actually, I’ll leave you to decide from the photo below whether she liked it or not.
