This week has just been really chaotic with a lot of stuff going on. I’m looking forward to hitting the reset button and starting again next week. I do have next week’s recipes planned and ready to go so I can promise there are a few exciting things coming up.
I’m a big fan of Italian cooking and love the variety of things you can do with plain simple pasta. For me, courgette spaghetti doesn’t hit the mark as good as the original (well gluten free) stuff. This dish has the best of both worlds, the spiralised courgette and the pasta. I’ve also added in tomatoes, prawns and a light lemon garlic sauce for the perfect simple summer pasta dish.
