Gluten and Dairy Free Cardamom Raisin Flapjacks

Hello everyone

Sometimes all you can do is laugh at the irony of a situation.  I’ve got to start taking medication because my already low blood pressure has got lower  – I’m talking lets check if the blood pressure monitor is broken low.

I had to laugh as my lifestyle points more towards high blood pressure – work is pretty busy just now and I do tend to work long hours, I eat a lot as you can see from the website, I love my coffee and I’m not someone who ever really sits down and relaxes.

Anyway, now I have to take these tablets and monitor my blood pressure every three hours.  Although I’ll grumble about it for a few days I’m grateful for the treatment and help that keeps me in control of my Ehlers Danlos Syndrome.

On to more exciting things – cardamom and raisin flapjacks!  I enjoy making flapjacks as a breakfast treat with some dairy free yoghurt and fruit.  The cardamom gives the flapjacks a really warm, interesting flavour – if you don’t have any then you can replace with cinnamon or ginger.
