The last few times I’ve baked it seems to have been cupcakes that I’ve made. While I was digging through my recipe notebook I came across my idea for a cinnamon swirled apple cake.
I’ve made sure the cake was lovely and moist with the addition of some dairy free natural yoghurt and nice chunks of fresh apple. I made the cinnamon swirl using coconut sugar but if you don’t have this you can easily substitute it for brown sugar.
Given the lovely weather I enjoyed a peaceful evening in the garden with a slice of this cake and updating some recipes on the site.
