Gluten and Dairy Free Mini Pistachio Cakes

Hello everyone

I made these little cakes to take into work for my team.  I’m a chartered accountant and work in a large company managing a team called Decision Support Consultancy.   I like baking for the team but it can sometimes be a challenge to get home in time to bake, cool and decorate a cake and still have nice natural light to take a photograph for the website.

I juggle work and the website by just taking photos of the food I make as part of my everyday life.  I don’t go out of my way to make things just for the site – if that makes sense.

These little cakes are rally easy to make and look quite pretty (I think).  Pistachios have a really lovely smell when you chop them up – nutty with a hint of gentle spice.  A quick google showed me that there is actually a man’s fragrance based on pistachio ice cream – I love the internet.

Gluten and Dairy Free Smoked Chicken Sausage Pasta with Garlic Cream Sauce

Hello everyone

I grew up in Stenhousemuir which is a small village near Stirling and inbetween Glasgow and Edinburgh.  When we went to university, my school buddies and I all went in different directions.  I went to university in Dundee to study accountancy (its what all the cool kids picked 😉) and my closest friends went to Glasgow and Cambridge.  We often met up in the holidays and seemed to go to TGI Friday’s a lot (this was prior to my coeliac diagnosis).  I always had the same dish –  a smokey chicken pasta with a garlic cream sauce.

I’m not sure what made me think of that dish but I had some smoked chicken sausages (from Marks & Spencer’s) leftover from a family BBQ and was looking to use them up for dinner.  I remembered that pasta and I’ve had a go at recreating it as best I could.

Whether it tastes like that dish, I’m not exactly sure because it has been a long time since I was a student, but I can say it is delicious.

Gluten and Dairy Free Neapolitan Milkshake

Hello everyone

I’ve named this milkshake after the famous Neapolitan ice cream that gets its name from Naples where it originated.  My friend Ed and I visited Naples last year at the end of a 2 week trip across Italy – it was a funny couple of days. We had already been to Milan, Florence, Rome and Capri – we finished our trip in Naples.

While we loved Pompeii and all the cool things to do in and around Naples we always seemed to be in a proper pickle.

We had to pay some kind of gang £30 to look after our car, we had an attempted mugging for my camera and then the car tyre blew in a less than desirable neighbourhood on the way to the airport.  The final insult was Ed’s holiday gifts for his family being stolen!  It was a great trip though and Naples did leave us with plenty of great stories.

This milkshake has a banana layer, then chocolate and finally strawberry.  It takes a little bit of patience to put together and get the layers right but I think it is worth the effort.

Gluten and Dairy Free Summer Prawn Pasta

Hello everyone

This week has just been really chaotic with a lot of stuff going on.  I’m looking forward to hitting the reset button and starting again next week.  I do have next week’s recipes planned and ready to go so I can promise there are a few exciting things coming up.

I’m a big fan of Italian cooking and love the variety of things you can do with plain simple pasta.  For me, courgette spaghetti doesn’t hit the mark as good as the original  (well gluten free) stuff.  This dish has the best of both worlds, the spiralised courgette and the pasta.  I’ve also added in tomatoes, prawns and a light lemon garlic sauce for the perfect simple summer pasta dish.

Gluten and Dairy Free Cardamom Raisin Flapjacks

Hello everyone

Sometimes all you can do is laugh at the irony of a situation.  I’ve got to start taking medication because my already low blood pressure has got lower  – I’m talking lets check if the blood pressure monitor is broken low.

I had to laugh as my lifestyle points more towards high blood pressure – work is pretty busy just now and I do tend to work long hours, I eat a lot as you can see from the website, I love my coffee and I’m not someone who ever really sits down and relaxes.

Anyway, now I have to take these tablets and monitor my blood pressure every three hours.  Although I’ll grumble about it for a few days I’m grateful for the treatment and help that keeps me in control of my Ehlers Danlos Syndrome.

On to more exciting things – cardamom and raisin flapjacks!  I enjoy making flapjacks as a breakfast treat with some dairy free yoghurt and fruit.  The cardamom gives the flapjacks a really warm, interesting flavour – if you don’t have any then you can replace with cinnamon or ginger.

Gluten and Dairy Free Raspberry Ginger Smoothie Bowl

Hello everyone

I hope you all had a great weekend.  I seemed to have one of those weekends, which despite best endeavours, wasn’t that productive.  Ollie cat has been poorly and ended up having to go in the bath and I dropped the pie shell I had just made for my strawberry tart.  It shattered into a million pieces – I think I’ll be finding digestive biscuit crumbs for the rest of my life.  Suppose some days are just like that!

I haven’t posted a breakfast recipe for a while – even though it is my favourite meal of the day.  As it has been so hot recently I’ve been enjoying cooling things for breakfast like this smoothie bowl.

Purple is my favourite colour so the pinky/purple colour of this smoothie bowl is right up my street.  It is really easy to make and you can top it with whatever fruit you like.

Gluten and Dairy Free Pizza

Hello everyone

I always find it fun making pizza so I thought I would share the recipe if you are looking for an activity to do this afternoon.  I made this last weekend when I had a friend up from London visiting.  As the weather has been so good the last few catch ups have resulted in a BBQ so this time we decided to do something different and make pizza.

I’ve included the recipe for the pizza sauce as well – it makes more sauce than you need for the pizza but you can easily freeze it.

Gluten and Dairy Free Chocolate Caramel Peanut Pretzel Pie

Hello everyone

I don’t think I’ll ever grow up properly!  The house I live in at the moment is more or less the same layout as the house I grew up in (and my parents still live in).  What I have now as my study used to be my childhood bedroom – it has a large cupboard in the corner which I always seem to have filled with rubbish.  When I was child I used to start tidying it out, get bored halfway through, play with some toy and get my sister to finish the tidy up.

Some things never changed, this weekend it was time to tidy up the study and that big cupboard.  Halfway through I still got bored and ending up sitting in an evening gown I had tried on reading a book about Chanel I found in the cupboard – some things never change.

I made this pie to take round to my sisters when all the family was round for dinner.  It has a crunchy biscuit base, a layer of beautiful peanut flavoured caramel, a layer of chocolate and then topped off with the crunch and saltiness of gluten free pretzels.
