Gluten, Dairy & Egg Free Chocolate and Peanut Butter Mousse

Hello everyone

I’m loving this hot weather – I had a family BBQ this weekend and for once it didn’t rain!  It was perfect – lots of gluten and dairy free treats, I’ll share the recipe for the sausage rolls and key lime pie I made.

This is a great dessert during this warm spell.  The mousse is really easy to make with only a few ingredients – coconut milk, peanut butter and dairy free dark chocolate. To make these desserts a little fancier I’ve topped mine with some whipped coconut cream and some dark chocolate curls.

The mousse is really rich so you only need a small amount – I’ve made mine in little espresso cups.

Gluten and Dairy Free Cherry Choc Chip Bread Pudding

Hello

I typed up this recipe to share last week when the weather wasn’t great.  Now it is scorching hot and you probably have no desire to sit down to bread pudding.  I thought I would share the recipe anyway and you can tuck it away to make on a rainy day.

I love cherry and chocolate as a combination and this pudding ticks all the boxes for me.  Each bite gives you a mixture of juicy cherries and melted dark chocolate.  If you don’t have fresh cherries this recipe also works well with frozen cherries.  I also have another bread pudding on my website for a rhubarb and ginger version if you prefer that flavour combination.

Working on a few new dessert recipes which I can hopefully share soon including a key lime pie, chocolate banofffe pie and a cararmel peanut chocolate pretzel pie – all gluten and dairy free.

Gluten and Dairy Free Serrano Ham & Spinach Pasta

Hello everyone

This recipe is the epitome of using up leftovers.  The day before my weekly shopping was due to be delivered I put together this meal from bits and pieces in the fridge and it turned out proper delicious – I would definitely make it again.

It is a lovely mixture of torn Serrano ham, sun dried tomatoes, fresh spinach, red onion and garlic in a delicate creamy cheese sauce within tiny pinch of chilli flakes.  It also made perfect leftovers for lunch the next day.

Gluten and Dairy Free Sprinkle Cupcakes

Hello

I actually made these cupcake to take when visiting family on Father’s Day.  I love the cute little cupcake cases and toppers, you can get really cool stuff for baking everywhere now.  My friend picked them up for me as he said he could totally see me sitting eating a cupcakes with a unicorn leaping out the top.  Just be careful when you are buying your sprinkles – I have come across some that do have wheat in them.

Got a few family gatherings coming up soon that I need to do some serious food planning for.  I’m working on a design for my niece’s first birthday cake and I’m having a family BBQ for Ollie’s 4th birthday next week – yes he’s the cat, don’t judge he is part of the family 🙂 Neither the baby or the cat have been forthcoming with their food preferences for the party so I’m taking that as I can make all the decisions.

Hello everyone

I’ve had gluten and dairy free choc ices on my to do list for ages now and I’ve finally got round to it.  I picked a simple to put together banana and peanut butter filling.  If you want to make another flavour you can use any of the ice cream recipes I have on my website.

They aren’t as difficult to make as I thought they would be.  It’s just having the confidence to dip a frozen ice cream into warm melted chocolate!  Hope you enjoy them as a lovely summer treat.

Tell us a little bit about your blog?

My YouTube channel is about helping young people like myself living with coeliac disease by sharing my advice, tips, recipes on how to make it enjoyable as well as easier.

What inspired you to write the blog?

There are not many young youtubers with coeliac to help younger people out so that’s why I decided to help people with the things I was I got help with at the start. I was diagnosed 9 years ago and I’m 17 now so it’s been a long time and I have gone through the change in how allergies are perceived compared with now so I wanted to try and make a difference.

What are your favourite ingredients to cook with?

I love making things with mustard powder! It’s sounds wierd but the taste is not what you expect. I love putting them into by breads and scones mainly as it just adds this extra amazing flavour!

What is your favourite cook book?

My all time favourite is 5 ingredients book by Jamie Oliver it’s just so easy and uses ingredients we all own. Most of the stuff is gluten free so it means I get to choose from a huge selection.

If you visit anywhere in the world for dinner tonight where would you go?

I would have a Chinese if they ever made it gluten free!

Gluten and Dairy Free Don’t Be Blue Be Cherry Smoothie

Hello everyone

I feel like I’ve had a bit of an over indulgent few weeks of eating.  First I was on holiday to Germany and food a cake shop that did amazing gluten and dairy free gateaux so needless to say I could be found hanging around in there most days.

Then my buddy that loves food as much as I do visited for a few days and we did a good amount of eating out, takeaways and snacking.

To try and make up for that I’m going to go back to having a homemade smoothie for my morning snack at work all of next week.  I’ve kick started it with my Gluten and Dairy Free Don’t Be Blue Be Cherry Smoothie.

This delicious smoothie has a base of apple juice with cherries, blueberries and banana.  I’ve also added in a good handful of spinach so you can get your greens without realising.  I’m still like a child that way – you have to hide my vegetables to get me to eat them.

Hello everyone

Last week a lot of cool stuff happened with the blog.  It started when I was FeedSpot’s top gluten and dairy free UK blogger, continuing into a really lovely positive reaction to my new profile picture and then one my recipes appearing on Gluten Free Heaven.  The good vibe is continuing into this week as I’m featured on Cut Out & Keep as their Cooking Superstar.  Over the week there will be an interview with me and I’ll be sharing one of my favourite gluten and dairy free recipes everyday.  Check out the fun community at https://www.cutoutandkeep.net

I’ve been working for a while on trying to create a kind of puff pastry that is both gluten and dairy free, is simple to make and is quick to make.  I think I have finally found one that I’m happy with and I can adapt it to both sweet and savoury.  Similar to me finding a good dairy free condensed milk last week, it opens up a lot of new recipe I can create.  I’m thinking things like apple turnover, sausage rolls, Danish pastries – this is going to be bad for my waistline!

If you don’t fancy the chocolate and peanut butter filling then you can easily swap it for any kind of fruit filling.
