Gluten and Dairy Free Smoked Bacon & Haddock Chowder

Hello everyone

I’m back home from an amazing trip to Germany.  It was really easy to get gluten and dairy free food – I’ll write up a little article about my experiences and share the usual pictures of what I had to eat and where about incase any of you are visiting the area.

Today’s recipe is for hearty smoked bacon and haddock chowder.  I’ve had this recipe photographed for a while but never got round to sharing it.

It is pretty simple to make, packed full of flavour and is something a little bit different for dinner or lunch.

I’ve been working on a  recipe for dark chocolate chip and cinnamon blondies which I’m hoping to bake and photograph today.  Fingers crossed they work out well and I can share the recipe with you soon.

Gluten and Dairy Free Cheesy Potato Bake

This recipe is based a little on potato dauphinois and a bit on another French dish I can’t quite remember the name of but enjoyed when I was in Paris.  So rather than give it a fancy name I’ve just gone with the simple Cheesy Potato Bake.

This is perfect as a meal on its own or as a side dish – I usually just eat it all as a main.  It is layers of lovely roasted onion, crispy bacon, fluffy potato slices in a creamy sauce topped with melted cheese.  It probably isn’t the healthiest dish on the planet but it sure is one of the most comforting.

I used Violife dairy free cheese and Alpro cream to make this dish.  I did burn the top of the cheese a little as I got distracted by something else.  I photographed it anyway as this website is just a catalogue of what I’m eating.

Gluten and Dairy Free Lemon Cupcakes with Raspberry Frosting

Back to today’s recipe, when I asked my lovely followers on FaceBook what three recipes they wanted to see featured on the site this week these cupcakes were a clear winner.  I’ve struggled in the past to make a raspberry frosting that got the full raspberry flavour without being too wet from the juicy fruit.  I’ve actually made this frosting with a high fruit content raspberry jam – this gives the frosting the right flavour, the perfect colour and a pipeable (that’s a word right?) consistency.

My favourite thing about these cupcakes though have to be the sprinkles, they are tiny white, pink and purple unicorns .  You can’t really see it properly in the photo below but I do have Willy Wonka wallpaper in the kitchen.

Coeliac Awareness Week – My Story

Hello everyone

This is a bit of a different post from my usual recipes.  I don’t tend to make my website that personal and I think this is probably one of the first pictures of me I’ve shared in a post.  It was taken last September in Pompeii, I’m talking as usual and I had just finished eating a gluten free cookie.

As it is Coeliac Awareness Week I thought I would share my story on how I was diagnosed with coeliac disease.  I actually have Ehlers Danlos Syndrome which is a connective disease that causes all sorts of problems so I always blamed what I now understand to be my coeliac symptoms on EDS.  Coincidentally, it is Ehlers Danlos Awareness month so I might share my EDS story later on in the month.

To cut a very long story short,  I was actually diagnosed with coeliac as a by product of being tested for something else and only about 5 years ago.  I used to have stomach aches after eating which got worse as I got older but I always related it to EDS as stomach problems can be an issue with EDS.

When I was in my early thirties I suddenly started to lose a lot of weight (I’m talking about 3kg in a week) but I had an insatiable appetite.  I was having to get up in the middle of the night to eat food as I couldn’t sleep for the hunger – I remember waking up in the kitchen next to a chocolate cake!

I had all sorts of tests to figure out what was wrong with me and the first set of bloods can back with the markers for coeliac.  I also started having problems digesting milk protein so I had to change to a gluten and dairy free diet all at once.

It was a lot to take in to begin with but I soon got the hang of what I could and couldn’t eat.  The worst day was when I packed up everything in the kitchen I couldn’t eat and gave it away.  I was left with literally nothing so I started from scratch and started to experiment in the kitchen.

I developed a real passion for gluten and dairy free cooking and started to share my recipes through my website.  My photography isn’t perfect and sometimes my writing isn’t great (I’m an accountant after all) but the main purpose of my site is just to share my food journey on a gluten and dairy free diet and try and help people if they are struggling.

Unfortunately the gluten free and dairy free diet didn’t solve my weight loss and hunger problems and I was eventually diagnosed with pancreatic enzyme deficiency which basically means my body doesn’t produce what is required to breakdown my food into the nutrients I need.

I now take all the enzymes required in tablet form, have put the weight back on but I still need to eat a bit more than your average person and more regularly.  well that’s my excuse for all the cakes on the website.

Gluten and Dairy Free Chorizo, Chicken & Potato Stew

I love the beautiful flavours that you get in Spanish cooking from what is essential a pretty simplistic dish.  I’m lucky enough to have good friends in Spain and love all the traditional food they have that is naturally gluten and dairy free for me.

I’m a big fan of chorizo, like bacon, I think it makes everything taste that little bit better.  As always double check the ingredients for the chorizo as I have seen a few brands recently that contains milk.  I usually buy my chorizo from Tesco and it is safe for people avoiding both gluten and dairy.

Gluten and Dairy Free Choc Nut Granola

Hello everyone

I’ve started doing a bit of work on my website updating some of the photographs and graphics that I have.  When I started my website the recipes worked well but some of the photographs aren’t the best.

Luckily I live a couple of minutes walk from this beautiful bay and spent a couple of hours in the sun working on this week’s posts and a plan for the photos I want to change.  I also had a lemon and raspberry cupcake with me to eat – I’ll share the recipe soon.

I often make my own gluten free breakfast cereal as it is so simple, and cheaper, to make.  As I can pick what I put in it I also enjoy the variety as there is often not a great choice in the supermarket.

Gluten and Dairy Free Choc Nut Granola

Gluten and Dairy Free Mocha Ice Cream

Hello everyone

Since it has been sunny for a few weekends in a row I thought it was about time to bust out the ice cream churner and whip up some new recipes.

There are several ways to make dairy free ice cream from using bananas to make it creamy or using coconut milk as the base.  This recipe is based on how you would traditionally make ice cream with an egg custard base.

I’ve used Alpro cream and milk as dairy free substitutes and dark vegan chocolate for the rich chocolatey flavour.  Trust me it tastes like the real deal.
