This is my ideal breakfast – I love anything that is pancake or waffle based. When I’m down visiting friends in London we always got to the The Good Life Eatery for breakfast so I can get the gluten and dairy free waffles with mashed banana, berries and coconut yoghurt.
Today’s waffle is a take on eggs and avocado toast. I’ve made the waffle with a little dairy free cheese added in for extra flavour. You can adjust this recipe to suit your own taste – adding a poached egg for example or if you don’t have a waffle iron then use the batter to make pancakes.
If you are short of time in the morning then you prep the batter mix the night before and store it in the fridge.
