Hope everyone is surviving the cold and snow this week.  While we didn’t have it bad at all I did get caught in a blizzard on the way to work.  Let’s just say I looked a bit of a mess by the time I got to the office and my suede boots were not happy at all.

I’m always after new soup recipes as they make great gluten and dairy free lunches.  I’ve not got a single recipe using celeriac on the website – they are weird little things though.  This soup is perfect if you are feeling the effects of the cold.

I’m always super touched when when someone brings in cakes or whatever and also brings in a little gluten and dairy free treat for me.  Yesterday at work I was super spoiled when Jo brought in the Sainsbury’s free from chocolate traybake so I could enjoy cake with everyone else – thanks Jo.  Also for anyone who hasn’t tried it – it is really good – just the right amount of cake and chocolate frosting.

I often make recipes that taste much better than they look – this is one of them.  I really enjoyed this as a tasty dinner a few weeks ago but when I came to add the photographs onto the website it didn’t look that exciting.  Oh well some things just don’t look great in food photos.  Luckily the combination of flavours make it a delicious and very easy dinner to put together at the end of a busy day.

Gluten, Dairy and Egg Free Mint Chocolate Mousse

I often find it easier (and quicker) to bake a cake rather than make a gluten and dairy free dessert.  I always tend to make dessert recipes that involve making pastry, baking things, time to set etc.  I’m working on a few quicker dessert recipes that you can put together quickly.

This recipe is based around adding flavours to whipped coconut cream to make a mousse like consistency.  I’ve gone with adding in chocolate and mint – a traditional combination.  I think I’m also try out some fruit flavoured mousses as I’ve only made chocolate and peanut butter mousse so far that is gluten and dairy free.

The other easy desserts I’m working on include some layered sundae/parfait cups and a few more mug cakes.  Hopefully you will see them appearing on the website soon.

I have my parents visiting tomorrow for lunch so going to try and find time to try out my new muffin recipe – spiced pineapple.  Think a lovely sponge with ginger, cinnamon and crushed pineapple – fingers crossed it works out well.

Gluten And Dairy Free Egg Mayo & Smoked Sausage Baked Potato

I love baked potatoes – but only ones with crispy skin and fluffy potato inside.  I eat them a lot when I’m out for lunch as they can often be a safe choice or a substitute when there is no gluten free bread around.

You can get the crispy skin by baking the potatoes in the oven but if you are short on time you can always microwave the potato to cook the inside, rub in a little olive oil and bake in the oven for 10 minutes.  That way you get a crispy skin baked potato in under 20 minutes.

I’m not sure why but I find lunch the most difficult to get recipe inspiration for.  I have loads of ideas for breakfast, dinner and cakes but my lunch ideas are always focused around different soups.

Christmas and New Year festivities seems like a distant memory now.  I’ve had a good first week back at work and I’m starting to think about new ideas and recipes for the website for 2018.

I don’t really set any New Year resolutions but it is a good time of year to take stock of where things are and get re-energised for the next 12 months.

Today’s recipe is for very tasty pasta dish loaded with flavours from the chorizo and sun dried tomatoes.  I love cooking with chorizo, it just makes everything taste so much better but make sure you check the ingredients as some chorizo has milk in.

Gluten and Dairy Free Gingerbread Pancakes

My regular followers will know how much I love my pancakes for breakfast – they are the ultimate treat for me.  The other morning I decided to try and make some gingerbread flavoured pancakes.  I used my basic pancake recipe but sweetened them with treacle, ginger and cinnamon to get that gingerbread taste.

Obviously the best thing about these pancakes is eating them but a close follow up is the amazing smell while they are cooking.  The smell of the warm spices is definitely a great way to start the day.
