I’m sticking with the orange themed colour of Halloween for this post.  Carrot isn’t something that I would of thought of to put in a  smoothie but I had a carrot smoothie when I was out and loved it.  I’ve paired this with some fresh ginger and orange for the perfect start to the day.

Gluten and Dairy Free Banana Muffins

Hello everyone

I fancied freshly baked muffins for breakfast last week – luckily this recipe can be on the table in 30 minutes.  Lovely fresh, fluffy muffins with banana and a little pinch of cinnamon and the kitchen was left smelling amazing while I ate breakfast.

These muffins also freeze well and taste great warmed in the microwave for a few seconds.

I’m pretty excited to start developing some new gluten and dairy free feel good food for autumn and winter.  I’m working on some new recipes for soups, stews and steamed puddings which I’ll share with you over the next few months.

This soup recipe has a lovely light flavour from the lemon and parsley but the chicken and rice makes it nice and filling for lunch.

Gluten and Dairy Free Peanut Butter & Jelly Waffle Sandwiches

Hello

I’m back going through a phrase of using my waffle iron again – it happens every few months or so!  This time I’ve been making these lovely little peanut butter and jelly waffles sandwiches – they are perfect to enjoy any time of the day.

If you don’t have a waffle iron you can use this recipe to make pancakes and top them with the peanut butter and jelly.

Gluten and Dairy Free Chicken Pad Thai

Hello everyone

Pad Thai is a traditional street food from Thailand.  It is basically rice noodles, stir fried with egg, vegetables and some kind of meat or fish.  As it is  made with rice noodles this makes it perfect for a gluten free diet.

I purchased all the ingredients to make this dish from my local supermarket so you should be able to easily get everything to make this recipe.
