Gluten and Dairy Free Cajun Chicken Wraps

Hello everyone

Hope you are all having a great weekend and enjoying the sunshine.  I’ve had a really busy week at work helping to organise and be a presenter at a big staff conference.  I’ve also got an unstable ankle so going in for surgery next week to get it fixed.  I’ve also been having a few problems with Facebook as well so sorry if I haven’t answered your comments, the last two weeks of posts seem to have disappeared!

We had a BBQ on Friday night, top tip – Marks and Spencer had loads of gluten and dairy free choices in the three for ten pound range.  We had lemon and herb salmon, Moroccan lamb burgers, chorizo burgers and sausages.

Hello everyone

This recipe was created more by accident than by plan.  I decided to make a quick soup with some vegetables I had in the fridge that needed used up before I went on holiday.  The result was a very simple but delicious soup so I thought I would share the recipe with you all.

The sweetness of the carrot perfectly compliments the gentle smokiness from the paprika – that’s great with a big chunk of freshly made gluten free bread.

Gluten and Dairy Free Mediterranean Prawn Rice

This recipe is the epitome of a simple but very tasty dinner idea.  You can make it even quicker if you want by using already prepped and cooked prawns and a pouch of microwavable rice.

The tomato rice is  full of flavour from the prawns, chorizo, onion, garlic and basil.  As always when buying chorizo double check the ingredients as some do contain milk but I’ve found I can easily find one without in most supermarkets.

Gluten, Dairy and Egg Free ‘Buttermilk’ Sultana Buns

Hello

Buttermilk is in inverted commas in this recipe title as it contains neither butter or dairy based milk.  You can easily make a dairy free version by adding some lemon juice to your dairy free milk, giving it a good stir and leaving for 10 minutes to thicken.

These buns taste like a cross between a rock bun and a scone, they are perfect as is or cut in half and spread with jam.
