I was after a quick dessert to make that I could take round to my sister and brother-in-laws to enjoy after dinner. I settled on making a simple sponge cake that could be served warm with dairy free ice cream or custard rather than starting to mess around making pastry or a more complex dessert.
Everyone enjoyed the dessert, and the small amount of leftovers was perfect cold the next day. I think this cake would work well with other types of fruit if you don’t have cherries.
