Gluten and Dairy Free Smoked Trout & Lemon Risotto

Hello

Risotto is a really easy dish to make gluten and dairy free as the majority of ingredients are naturally free from.  If you don’t have smoked trout you can use a slice of trout if you cook it first.

The beautiful flavours from the trout, fresh lemon and basil make this a lovely dish to have for evening meal.

I’ve been updating some of my photos ….

I’ve written/moaned a bit about how my photos look rubbish when I don’t take them in natural light.  Hopefully that problem is a thing of the past now as I got a photography light source as a lovely Christmas present.  Inspired by that I’ve started to re-photograph some of the recipes that annoy me the most.  I’ve started with these two pumpkin pancake recipes as the colour was really bad on the original photos.

Gluten and Dairy Free Chocolate and Berry Celebration Cake

Morning everyone

I’m hoping to have a relaxing Sunday today – locked away in my study working on the website with maybe a little trip to the kitchen to do some baking.  I’ve got a lot of recipes photographed I need to type up so I can share them with you and also a few eating out recommendations from some city trips I’ve been on.

Today’s recipe is for this gluten and dairy free chocolate and berry celebration cake.  I’ve actually made this cake twice in the last month, once for my Dad’s 70th birthday and for a friend’s 50th more recently.

I first saw someone making chocolate cigarillos on the Great British Bake Off and was inspired to try them with dairy free dark chocolate.  They are actually easier to make than they look.  In the recipe I’ve included a link to the guide I used to make them and details on how to buy them if you prefer.

Gluten and Dairy Free Pear and Raspberry Bakewell Tart

Morning everyone

Hope you all had a good weekend.  This recipe is testament to the fact that something really tasty can be put together from a vague idea and a few store cupboard items.  My parents were visiting for dinner and after a weekend away I hadn’t time to go food shopping.  After a bit of routing around in the cupboard I put this tart together for dessert.  It was a big hit with the parents so while it was a bit difficult to photograph I thought I would share the recipe with you all.

Gluten & Dairy Free Banana & Peanut Butter French Toast

Hello everyone

This is my definition of a proper treat breakfast.  Rather than make traditional French Toast I’ve made a breakfast sandwich with banana and peanut butter.  I’ve cooked it the way you would French toast so you get the best of both worlds.

If you don’t like banana and peanut butter you can substitute this with any filling, sweet or savoury, that you would like.

Gluten and Dairy Free Paprika and Oregano Bread

Hello

I’m keeping up my promise to work on more gluten free bread recipes and I’m actually really enjoying it.  This tasted amazing but was a little bit of a funny shape as my cuts on the top were a little deep but I’m still learning and it doesn’t affect the taste.

I served this bread with some spiced sausage creamy tomato pasta for dinner and then toasted the rest the next day with some scrambled egg for breakfast.

Next on my bread making list is some flatbreads and a French stick recipe.

Gluten and Dairy Free Candied Orange Madeira Cake

Hello everyone

I’m writing this post on a leisurely Sunday morning enjoying a lovely gluten and dairy free breakfast in an Italian café.  By the time you guys are reading this though I will be in my usual during the week disorganised routine rushing around doing a million things.

I posted a recipe for a basic Madeira cake ages ago and this recipe uses that as a base. I’ve gone with the orange flavour adding zest to the sponge and filling it with a delicious marmalade.
