Gluten and Dairy Free Lemon Tart

Hello everyone

I’m going through a little craving of delicious pie/tart based puddings – no idea why.  Maybe it’s to do with how pretty they look or the endless flavour combinations or maybe its the constant challenge of trying to make a tart filling without double cream or condensed milk!  I’m also working on developing an apple pie with a flaky pastry topping – I’ll keep you update on it’s progress.

This tart is light and creamy with a lovely lemon flavour, not too much but just enough!  I’ve actually surprised myself that I have about 700 recipes on the website but I didn’t actually have a lemon tart.  That has now been remedied with this simple recipe.

Extract From My New Recipe Book – Gluten and Dairy Free Chocolate Chip Peanut Butter Cake

Evening everyone

As promised this morning, to celebrate the official release of my second recipe book I’m sharing an extract from it.  This recipe is for a gluten and dairy free chocolate chip peanut butter cake.

Gluten and Dairy Free Chocolate Chip Peanut Butter Cake

Ingredients

For the cake:

  • 200g dairy free spread
  • 150g peanut butter
  • 100g caster sugar
  • 100g brown sugar
  • 4 eggs
  • 250g gluten free self raising flour
  • 100ml dairy free milk
  • 100g dairy free chocolate chips

For the Frosting:

  • 220g icing sugar
  • 30g cocoa powder
  • 125g dairy free spread

Method

  1. Preheat the oven to 160ºC
  2. Grease and line a 9” round cake tin
  3. Beat together the dairy free spread, peanut butter, caster sugar and brown sugar
  4. Whisk in the eggs one at a time
  5. Stir in the flour, milk and chocolate chips
  6. Pour into the cake tin and bake for 50 minutes
  7. Allow the cake to cool completely
  8. Make the frosting by beating together the icing sugar, cocoa powder and dairy free spread
  9. Spread on top of the cake

Hello everyone

I’m trying to be prepared and get ahead with Christmas this year – I have it at my house and while I absolutely love it (feeding people is what I do!) it is hard work.

I had a holiday from work today so I made a couple of Christmas recipes and photographed them for the website and then spent the afternoon Christmas shopping. I’m having an operation on my knee next week so I have no desire to be going round the busy shops on crutches!

Gluten and Dairy Free Chocolate Orange Cookies

I’m not sure why but I don’t often make biscuits and cookies.  When I go into the kitchen to make something sweet I always tend to make a cake.  These cookies are a crumbly shortbread with zesty orange dipped into dark chocolate.

The recipe makes 18 cookies but you can keep the uncooked cookie dough in the fridge for up to a week so you can bake the cookies fresh.

Gluten and Dairy Free Mexican Hot Prawn Sandwich

I’ve recently discovered, and I’m loving, Schar’s gluten and dairy free panini rolls.  They are great for making hot sandwiches for a treat lunch or with some chips for dinner.

I’ve used a kind of Mexican fajita flavouring on the prawns and added in some Violife Cheese, mayo and salad leaves to finish off the sandwich.

Gluten and Dairy Free Peanut Butter and Jelly Pancakes

Morning Everyone

Yes it’s time for another pancake recipe – one day I am going to run out of pancake flavours.  I’m known for making giant stacks of pancakes – actually most Saturday mornings.  So much so my friend actually bought me this for my birthday a few months ago:

So I proudly eat my pancakes from that plate now!  This time my pancakes combine the notorious peanut butter and jelly – the pancakes have the peanut butter and are topped with a home made fruit compote.  A real treat to start off the day.

Gluten and Dairy Free Pork and Sage Pie

This is a totally late post – I never got round to posting my recipe for Tudor week on the Great British Bake Off!  So better late than never this is a gluten and dairy free recipe for a traditional pork and sage pie.

This is made using a traditional hot water crust pastry that I’ve adapted to allow for the gluten free flour and dairy free spread.
