Gluten and Dairy Free Chocolate Lime Meringue Pie

This recipe is a twist on the classic lemon meringue pie.  I’ve used a delicate chocolate pastry and filled it with lime curd and finished with traditional meringue.  A slice of this pie looks amazing with the dark chocolate pastry, the vivid lime green curd and topped with glossy white meringue.  Unfortunately I don’t have a picture of the inside because we ate it all!

Starting on Thursday I’ll be sharing my gluten and dairy free Christmas recipes – the first of which is for mince pies.

Gluten and Dairy Free Cherry Chocolate Chip Pudding

Evening everyone

Hope you all had a good weekend.  The last of this week’s recipes is super simple and is for a gluten and dairy free cherry chocolate chip pudding.  This is sort of a hybrid between sorbet and ice-cream but takes minutes to make.  The frozen banana adds a creaminess to the pudding making it a healthy treat.

Gluten and Dairy Free Pumpkin Spiced Granola

Pumpkin Granola

Hello Everyone

It’s granola recipe time again – but this one is in keeping with my pumpkin theme.  Granola with some dairy free yoghurt and fresh berries is still one of my top two breakfasts – the other being pancakes.  It also explains why there is a million granola and pancake recipes on my website – in fact I think there is actually not one but two granola pancake recipes!

If you aren’t digging my pumpkin obsession just now you could substitute it in this recipe for something similar like either apple sauce or a nut/seed butter.

So in summary this recipe is:

  • Autumnal
  • Cinnamony
  • Nutty
  • Perfect with yoghurt and berries

Thanks everyone for the kind messages you sent about my knee operation.  Everything went well and I’m out of the hospital now – trying to be good and stay off my feet.  Already getting impatient as I want to go into the kitchen and work on a new recipe idea I have.

I’m also a little bit prepared this year and have already photographed a couple of Christmas recipes.  I’m planning to start sharing these on the 1st of December.

These waffles are one of those recipes that I made when I just had a few things left in the fridge before my shopping was delivered.  Turned out to be a pretty tasty lunch so I thought I would share it with you all.  I used Violife cheese which I got in Tesco to make my waffles.

Gluten and Dairy Free Chocolate Plaited Buns

Morning everyone

I love sweet bread buns so I was super excited when my vision for a gluten and dairy free chocolate plaited bun actually worked.

I’ve used an enriched sweetened dough and then filled with beautiful dark chocolate.  They are fairly simple to make, I’m not that great at bread making and I manage to pull this recipe together!

I get my knee operation tomorrow but don’t worry I have a few recipes squirrelled away to share with you all while I’m off my feet for a bit.

Gluten and Dairy Free Chicken Biryani

Hello everyone

As a general rule I try to post simple recipes that don’t have a huge list of fancy ingredients you need to source from all over before you can make it.  This recipe does have a longer than usual list of ingredients but a lot of them you will either have in the store cupboard or can easily pick up from the supermarket so don’t be put off.

Biryani is a personal favourite of mine and my local Indian restaurant has a option to have this gluten and dairy free.  It has been on my list of things I wanted to develop a recipe for and I finally got round to it.

Biryani is derived from the Persian word Birian, which means ‘fried before cooking’ and  Birinj, the Persian word for rice.  There are a number of interesting theories/legends on how the dish managed to make its way from Persia to India.

Gluten and Dairy Free Spiced Pumpkin Breakfast Bars

Pumpkin isn’t just for Halloween right?  I bulk bought pumpkin puree as  I love baking with it, so now I’ve done my Halloween style pumpkin recipes I’m going to use the rest to make everyday things.

These bars are simple to make and are great for breakfast with a dairy free yogurt and some fresh fruit.  I also made some pumpkin spiced granola so I’ll share the recipe for that next week.

Gluten and Dairy Free Affogato

This recipe is so simple to make it almost isn’t a recipe – but I think it is a lovely little elegant finish to a dinner.

Affogato means drowned in Italian and that basically describes the dessert – a scoop of ice-cream drowning in a shot of espresso.  I also like to add some crushed biscuit and chocolate chips and then rather messily stir it all together so the biscuit goes soggy and the choc chips gooey!  I’ve also had the Spanish version where they use sherry instead of the espresso.
